    I love Manzanilla, and I often drink it when I’m out and about… Salty, nutty, chamomile, sourdough bread before it hits the oven, a light honey and mint thing too, lemon zest and green olives. It’s dry and nutty, distinctly saline, fine chalky texture, green olive brine and pistachio, with a tangy, zesty and nutty finish of excellent length. It’s fresh and sharp, (as it should be), but also a little wild, and gee, it’s a very good expression of Manzanilla. The crunch on the finish seals it. Yes. (94) GARY WALSH

    With an average age of 12 years, the wine immediately exudes soft, rich aromas of dried fruit, mixed spice, and toffee. Layer upon layer wafts from the glass, giving something new with each sniff. The palate maintains that full, robust quality, but with a core of nervy, lifting acidity that leads to a long, sweet spiced finish. Rather than serving the Don Nuño at room temperature, stash it in the fridge for 15 minutes or so before pouring it into a standard white wine glass to help the aromas and flavors pop.     We have been enamoured with the mencia based wines of Spaces northwest since first we tried them. Their beautiful lifted nose spiked with mineral accents that flowed onto graceful pallets raked with fine granit like tannins an earthy savouryness at the edges. They are something akin to cru Beaujolias crossed with the finest reds of the loire and we just cant get enough.

    Bodegas Pittacum is owned by the Terras Gauda operation and is situated in Argaza in the heart of Bierzo and made from grape sourced from small plots of organically grown 90 year old vines grown in clay soils on steep slopes.

    Glace fruits with crème de mure and raspberry coulis flecked with granitic mineral shards. Mid weight styling come from slippery red fruits and a gentle burst of freshness that comes not from acidity but from a deep mineral vein soaked up from the long roots and rocky slopes. Its like a bowl of mixed berry smashed onto rock and is absolutely delightful. If you have not had the wines of the region or mencia this is a belter of an introduction.

    Zar Brooks can't decide whether it's ximenez (front label) or ximinez (back label). From a solera started in 1944, now an average age of 30 years.     Made from 30 year old material this Pedro Ximinez is produced in an amontillado style. Dry with
    hints of walnut and pecan nuts, tea leaf and crème brulee. Though the wine is sweet it is dryer than many luscious Pedro Ximenez's, the rancio nutty character is fresher and more reminiscent of amontillado Sherry. Rich, with hints of orange rind, and marmalade and finishing with a dry nutty toffee flavour and fresh zesty acidity. Quite long and fresh. PWS

    Christmas in a glass! Rich and intense with apricot and marmalade characters. This fortified Pedro Ximénez was made from grapes grown in one of the last remaining Pedro plantings in the Barossa Valley. Amazing!

    This is a bit of a staff favourite too. A few of us sweet tooths are big fans of this bad boy and this is a very cool interpretation that isn't quite as intense concentrated as its orginators in Spain but is all the better for it. A little lighter on its feet and that's the way we like it.

    César Márquez Parajes is a coupage of the most prestigious and unique Bierzo plots. Old vines grown as they used to be, without using pesticides or chemicals that can damage the natural balance of the terroir. Each of the plots is worked separately according to their needs and the harvest is carried out manually.

    In the winery, 50% of the grapes used to make César Márquez Parajes are destemmed. Then they are pressed in the old-fashioned way, with feet, so that some of them stay whole during fermentation. Fermentation is spontaneous with the grape’s native yeasts. Once the must becomes wine, it is pressed and placed into 225 and 500 litre barrels separately. After 12 months the barrels are emptied and the different wines are combined.

    César Márquez Parajes remains true to its roots. A wine that overflows with natural elegance as a result of the quality of the raw material and the expertise of the makers. Freshness with enveloping smoothness. DECANTER

    The super affordable 2021 Parajes really overdelivers in this cool year. It was produced with grapes from up to 45 different plots in nine villages, trying to capture the essence of Bierzo. This regional red mixes soils and altitudes, mostly very old plots and therefore planted with a field blend with a majority of Mencía but also around 10% Alicante Bouschet and 5% whites or other reds like Bastardo, Souson or Estaladiña. It fermented by plot in stainless steel and plastic bins with some full clusters, indigenous yeasts and variable macerations, ranging between 15 and 60 days. Seventy-five percent of the volume matured in 225-, 400- and 500-liter barrels and the rest in a 5,000-liter oak foudre. It's aromatic, floral, perfumed and elegant, with a medium-bodied palate and very fine tannins. It is round and juicy, with very fine tannins and depth and complexity, corresponding to a much more expensive wine. A bargain. He harvested quite early in 2021, and the wines have moderate alcohol. 29,504 bottles produced. It was bottled in December 2022. LUIS GUITIERREZ, Wine Advocate

    There are some incredible things happening in Spanish wine right now and one of the producers at the heart of this revolution are Envinate. A project between four winemakers who met studying oenology in Alicante in the mid two thousands bonded around a shared ideology and desire to explore and express the underappreciated terroirs of Western Spain.     This sake is classic Tengumai, made using Yamahai method. 'Jikomi' means 'procedure' or 'method'. This Junmai sake has been matured in tank more than 12 months. It has slight golden color, and full of flavour, complexity and good acidity.Yamahai is a very old and traditonal technique, and Tengumai have mastered this technique and it is reflected in this sake. Lots of spices, tumeric and even aged chese aromas. Rich and complex on the palate, with savoury, creamy, citrus characters, it has an incredibly long finish.

    Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720ml

    Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end. 

    Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

    ‘Aranzá’ is Rafa’s sub-vineyard name for a small portion he selects from Viña La Palma. La Palma itself is a small vineyard, 3 hectares of 60 year-old Palomino growing in Albariza tosca cerrada. The term ‘Aranzá’ is a short-hand for the local measure of land area, an Aranzáda – depending upon the colloquy involved (the measure is different in each town and possibly grower-to-grower!), it’s roughly a half hectare.

    Pickled hay, buttery chalk and the cold steel smell of yesterday’s Tea Billy. Savoury, earthen, edged and filled with pickles and spice. Dandelion, a nice rim of diatom (blue oceanic fossil minerality), pickled cucumber, a sapid buzz in the cheeks and corners of the tongue. A round and savoury style, the cereal-inflected Palomino is mid-weight with an understated, lovely finish of bitters on the point of the tongue. Incredible volume and textural satisfaction at such low ABV.

    The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.

    The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.

    Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.

    Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.

    The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

    One of the large, historical houses of conventional sherry-making, Williams and Humbert nowadays offer a layer of distinct wines within the fluidity of its 'Sherry' styles. Under the young generation leadership of Paola Medina Sheldon, the Williams Coleccion is a series of astonishingly delicate and singular vintage sherries, or añadas: statically aged single-vintage wines, with terroir as important as bodega influences. Paola mainly takes fruit from the 'las Conchas' vineyard within Pago Añina (jerez), and some from old vines in Pago Carrascal (jerez). 

    In every respect, Finolis parallels Willy Perez's remarkable statically-aged natural alcohol Fino Caberrubia (from the same Pago), except that it's a half degree of booze short of the regulations. Only 50% free run juice yield from pressing was used, fermenting naturally to 15%. The wine was then aged in old 600L Fino casks with 20% ullage to allow plenty of Flor. Later, at nearly 5 years of age, the wine was bottled en rama (unfiltered), however the DO refused to ratify it as a Fino as the alcoholic degree had diminished, and it's in the market as table wine of Cadiz, not Fino.

    Upon demand, Gutierrez Colosía make occasional bottlings of super-textural Fino straight from the barrel, or 'en Rama'. Sacas of 'standard' Fino del Puerto, 3 years old, are bottled light and fresh at 15%. Drift wood, oyster shell and chamomile reveal instantly on the nose. There is a mild white pepper note and a floral spice. The palate is round and balanced, it persists and carries the weight and texture of barrel-condition Fino with ease. Toasted pistachios, cashews and roasted seeds add a nutty weight, while a touch of peach skin and pepper-citrus-astringent hold all in line. TSA

    Kenbishi is very classic – keeping same Sake making methods which involve Yamahai method and wild yeast. King of Sake rice ‘Yamadanishiki’ 100% used. ‘Mizuho’ means ‘ear of rice’, but in this case, Kenbishi meant it is ‘Junmai’. Blends of 2 YO to 8 YO tank aged Sake. Distinctive golden colour.     This is the most renowned pago in Jerez, planted on pure albariza, a white soil high in calcareous microfossils. Equipo Navazos sources the 115 from a bodega that farms their vineyards entirely by hand and without chemical inputs.
    My heart stuttered a bit when the glass was set in front of me: rather than the pale-lemon colour I've come to expect in fino, it was a soft apricot, and I worried that it was past its prime. It was not. It smelled fresh and characterful - Could a wine be more Spanish? It smells like the sea, rich, fatty Valencia almonds, orange zest kneaded into yeasty bread dough, a touch of Manzanilla olive brine and a caramelly tang like birch syrup.     The NV La Bota de Fino 115 is still 100% from Macharnudo Alto, and they are trying to make a slightly more fluid wine, not like a Fino Amontillado, which was the case with some bottlings coming from the selection of very old soleras. It's slightly different from the previous edition, number 91; this is slightly younger, between seven and eight years of age, but it keeps the same style, just a little more approachable.     Bottled a few days ago. From the Machurnado vineyard. They have decreased the average age by a couple of years so it's seven or eight years on average and the wine is more refreshing and not so uncomfortably concentrated. Firmer and nuttier than I Think Manzanilla with real tang and bite. Hint of molten dry treacle. Real grip. Neat and convincing. Not yet open - needs a couple of months. JANCIS ROBINSON MW

    Wheatie, course ground grains and a background hint of fresh toast with wildflower honey. That alone had me coming back. But the aromatics are multidimensional, they run through a wild, complex and beautifully constructed spectrum, from perfume to damp stone, hay to honey roasted nuts. Crazy nuance and head spinning detail. There is so much involved here, but it is by no means bombastic. These details are, at times, faint little suggestions that mingle amongst more obvious characters. It takes time in the glass and air to shake loose some of the more reticent attributes. But they are so inviting and alluring. It is worth just sitting on a glass for a while. I poured some aside to keep coming back to over a couple of days.
    The subtle, though not shy, nose does not prepare you for the impact on your palate.
    It hits with some force, there's a lot of flavour here and it begins on impact. From the moment it touches your mouth it is a crazy dance. Intense, unusually concentrated and powerful for the style. Loaded up with character and brimming with confidence. This is a Sherry of presence and stature, however it does not depart from the things that we all love in Fino. Salty. Oh, so salty. Fresh feeling, it pops with a sense of spring in the mouth but then leans in to autumnal notes as it slowly, so very slowly, fades away. A final twang of salinity and chalky texture on the incredibly long finish, reminds you exactly what you are drinking.
    This is both thoroughly and utterly delicious as well as deeply convincing and totally spellbinding. I love it! ROSCOE

    Here is more nutty, dried malts, slightly stale toasted sour dough. Deeply impressive. Complex but the spectrum is more on the savoury side nearly meaty aspects mingle with a wild estuarine note that carries with it pangs of salinity and twinges of bitter lemon rind that puckers your mouth but sets the salivary glands quivering. The way is stains the palate with flavour and gains volume in the mouth you think it is higher in acidity than it is, when in actuality its kind of caressing and fulsome, just those little twangs and pinches I mentioned poke out and add a sense of tension as well as tactile nuance. In some ways it feels like great Chablis in that regard, just in the saline whacks that hit your mouth in unexpected moments.
    The other wine deserves your attention this demands it. Unreal. This is a little more cerebral, a bit more contemplative, don't contemplate anything too serious though, maybe what you should eat with it. Either way it's attention grabbing.
    Not really sure my ramblings do either wine justice but hey, they are both so damn good that I hope they will speak for themselves. ROSCOE

    Merenzao is the same variety as Trousseau (and Bastardo in Portugal) and was probably brought to Ribeira Sacra by the Cistercian monks who set up camp here in the Middle Ages. Algueira’s Merenzao vines have an average age of 80 years and are rooted in a steep slope of gneiss, quartz and slate in the Amandi Gorge. The fruit sees a wild yeast, 100% whole-bunch ferment, is pressed by foot and aged for 12 months in old oak and some local chestnut vessels.

    The result is an extraordinary, unique wine with a complex perfume of finely detailed fruit characters that recalls wild cherry steeped with blood orange, rose and a tincture of wild herb. There’s more colour and muscular density from the solar year, yet it remains super lucid and tender and finishes long, leaving behind a lick of elegant tannin and a perfume of sweet red berries and smoky minerals. This is one tasty Bastardo!

    This is from a plot planted with the classical field blend found in the old vineyards, mainly Mencía with a myriad of other varieties-Caíño, Sousón, Brancellao, Merenzao, Negreda, Garnacha, Mouratón... The full clusters fermented with indigenous yeasts, and the wine matured in 225- and 500-liter oak barrels for one year. This is explosive with a baroque, exotic and decadent nose redolent of flowers, soy sauce, violet pastille, spices and herbs. It's a little spirity (it's 14.2% alcohol), which probably adds to the showy profile. The palate is a little more backward-it's structured and has abundant, fine tannins, still a little hard. 800 bottles produced. (97+) LUIS GUTIERREZ
