Its certified organic and has eighty acres of vines that grow on the gentle hills of sand and fine silt soils. All harvests are done by hand and the domaine does not use any chemical fertilizers or pesticides. This is a dry and textural blend of Colombard, Ugni-Blanc, Sauvignon, and Gros-Manseng.
We were super impressed with the latest vintage here. Much more texture and weight then in previous vintage with an emphasis on phenolic grip and slippery fruit. There is lovely chalky, white pepper note on the nose with fresh nashi pear and green apple to the fore. They have done it again! This is my go to white for summer with a lovely lemony, floral lilt and powdery, perfumed nose. Gentle and bright with clean and crisp flavours of orchard fruits and white nectarine. Its uncomplicated and delicious with clean, crunchy fruits and a zippy, minerally finish. Ridiculous value. Stift Gottweig Gruner Veltliner Messwein 2023Stift Goettweig Messwein Grüner Veltliner comes from an estate that has been engaged in wine-growing in the Kremstal region since the 11th century – though it can be said to be in the form of its life, with 2020 Winemaker of the Year Fritz Miesbauer doing a great job at the helm.
The Göttweiger Messwein, or altar wine, has been an institution in this Benedictine monastery for centuries. Grüner Veltliner and rosé (from Pinot Noir) are vinified as light, dry wines. From the nature-friendly cultivation of the vineyards to the care and processing of the grapes and wine, the “Reinheitsgebot”, or purity law, of the church must be obeyed. Messwein cannot be produced without the permission of the bishop, and it must be only natural and unaltered. Dewazakura Dewa Sansan Junmai Ginjo Sake 300mlDewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture. This rice makes a very soft and deep flavoured style of sake. It shows characters that resemble wine and has hints of herbs, yeast, and mushrooms. The palate has good zingy acidity, with citrus/lemon tang, and a clean and fresh finish with wonderful mouthfeel.

Nick Spencer Gruner Veltliner 2023Gruner Veltliner is a white grape variety native to Austria, Slovakia, Hungary and Czech Republic. In Australia Gruner is planted exclusively in cooler regions such as the Tumbarumba, The Adelaide Hills and Tasmania. Gruner is often compared to other varieties such Riesling with slightly more volume, texture and more approachable acidity and more subtle, nuanced aromatics.
The 2022 displays aromas of grapefuit, stone fruits, citrus and subtle spice. That lovely green herb flecks the nose and the palate with that line of grapefruity, citrus complemented by fresh white peach and subtle pear. The palate is vibrant and juicy with lovely salivating acidity with some wonderful phenolic play that grips the mouth on the way through. A really impressive Australian version of this varietal with more hopefully to come. We continue to be impressed with the line-up of Nick Spencer gear we try.

Schloss Gobelsburg Gruner Veltliner Loss 2023Loess terraces and vineyards paint the classical picture of the Kamptal region. The soft formed hills around Langenlois are a gateway to the Waldviertel area, defining the climate of the valley. A Cistercian monastic estate, is one of the oldest wineries in the Austrian Danube area with a documented history that dates back to 1171. All the vineyards are located on slopes and terraces around the valley of the river Kamp near the town of Langenlois and the village of Gobelsburg. His ability to tame the searing acidity with concentrated fruit while keeping the wines bone dry and without ever losing any balance is exceptional. His work in the vineyard, slow & long pressing, time in old neutral oak and use of whole clusters the key to maintaining the knife edge wines he has endeared his fans with.
Waxy citrus, pear and white orchard fruit entice you in while a gentle floral lilt and softly spice nose keep you coming back for more. The palate is refined and electric, with a long, slightly leesy finish, that seems to build and build in on its self as you continue to sip it. This is at once luxurious and broad that seems to paint the flavours across your palate while sitting up, fresh and bright on a web of tightly woven acidity. Very cool!

Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720ml
Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end.
Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.
