Spinifex Papillon 2023Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. Cool and fresh. Lively and bright. A chillable, slurpy, crunchy red emerges. Red cherry, raspberry, cranberry, alpine herbs, some menthol-like lift, aniseed and pepper, a touch of white chocolate. Mount Mary Marli Russell RP2 2021Grenache (60%) Shiraz (25%), Mataro (10%) and Cinsault (5%). It’s in keeping with my little Grenache theme this week, except it’s from the Yarra Valley!
It’s complex and a wine of many layers. Raspberry and blackberry, plenty of perfume and spice, hazelnut, something in the way of dried herbs and earth. Medium-bodied, no shortage of red and black fruit, rose oil, but also something a little more meaty and savoury in the mix, with fresh acidity, kind of like pomegranate, fine emery board tannin grip, and a fine ‘minerally’ finish of excellent length. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.

NOSE
Broad and medium-weight with citrus peels, ginger snap biscuits. Sweet and with great depth. Apricot aromas develop then drift towards fruit salad. After a short time the wood come to the fore and water helps to release baked fruit.
PALATE
A complicated palate where the initial nose would lead you to expect plump fruits, what you get is a surprisingly dry element. The palate fleshes out as the first impact of the nose fades. Adding water brings out the caramelised elements balanced with the wood elements expected of a 15 year old.
