Spinifex Papillon 2023Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. This is 66% grenache, 31% cinsault and 3% counoise. Always the shapeshifter is Papillon.
Cool and fresh. Lively and bright. A chillable, slurpy, crunchy red emerges. Red cherry, raspberry, cranberry, alpine herbs, some menthol-like lift, aniseed and pepper, a touch of white chocolate. Brash Higgins CINS Cinsault 2022From the neighbouring Lennon Vineyard, this spent two weeks on skins in an open fermenter before pressing to ‘veteran’ French oak to mature for seven months. A variety that delivers grace and vibrancy in warm conditions, this leans into those proclivities, and perhaps more so given the cooler year. Cherries – red, black and sour – peppery spicing and raspberry-leaf tea across a wine that ticks under mid-weight, lacy, fine tannins and lively acidity upping the verve. Mount Mary Marli Russell RP2 2021Grenache (60%) Shiraz (25%), Mataro (10%) and Cinsault (5%). It’s in keeping with my little Grenache theme this week, except it’s from the Yarra Valley!
It’s complex and a wine of many layers. Raspberry and blackberry, plenty of perfume and spice, hazelnut, something in the way of dried herbs and earth. Medium-bodied, no shortage of red and black fruit, rose oil, but also something a little more meaty and savoury in the mix, with fresh acidity, kind of like pomegranate, fine emery board tannin grip, and a fine ‘minerally’ finish of excellent length. This is a recent bottling, but there are no clues about it on the labels; but they mention En Rama, bottled unfiltered. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.
