Calvados, Cinsault, Albarino, ...

Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. That whoosh of sour red plum at the end gets me every time. So good! (95) DAVE BROOKS, thewinecompanion

This is 66% grenache, 31% cinsault and 3% counoise. Always the shapeshifter is Papillon.
Cool and fresh. Lively and bright. A chillable, slurpy, crunchy red emerges. Red cherry, raspberry, cranberry, alpine herbs, some menthol-like lift, aniseed and pepper, a touch of white chocolate. Good energy here. Some real get up and go. Freshness implicit. Cool. MIKE BENNIE, The Wine Front

Light cherry red hue. Raspberry, blueberry and anise aromas. Bright on the palate: juicy raspberry fruits with hints of rosemary and dusty earth adding complexity. Fine and polished nose - floral, figgy and gently meaty, it's a delicate and perfectly varietal expression of Monastrell. Soft, wide tannins start the mouth off and a long rip of ripe acid in the back half really straightens things out. This Godello comes from old vineyards planted right next to the Sil river, in the Seadur village (Ourense), cultivated in slate and decomposed granitic soil. Destemming and short maceration (>4 hours). Soft pressing and static racked of the must in preparation for a slow temperature controlled fermentation in stainless steel tanks.

Translucent and bright pale yellow. In the noseis intense, predominant aromas of ripe apple, water pear, white flesh peach, framed by fennel and anise. In the palate is powerful, voluminous, as well as refreshing with a silky and pleasant finish.

Etiqueta Ambar uses grapes from vineyards that are over 40 years' old, mostly in Cambados and Meao in the Salnas Valley on sand and granite soils. Almost Riesling like in terms of structure and acidity (Diego Rios worked in the Mosel Valley) this is stony and intense,with layers of lime cordial, green apple and lemon zest and impressive extract. 2024-29. TIM ATKIN MW

The 2023 Albariño Granbazán Etiqueta Ámbar, sourced from Val do Salnés, undergoes a few hours of skin contact before fermenting and aging eight months on lees. Yellow in color, it presents aromas of white peach, orange blossom and candied citrus. The palate is dry, light and delicately fresh with a slight spritz adding texture. Full bottle 1,245 g. Tasted blind and then tasted again (not blind) several times over several days. Certified sustainable (Fair’N Green). Several months on fine lees.
Delicate and pretty, going from fennel flowers to lemon verbena to lemongrass to lemon sherbet. Gentle but surprisingly deep plashy pools of acidity. Orange citrus and tamarind at the core, that over 10 days softened to buttery saffron. Like all the really good, complex Albariños, it has high-frequency intensity. It feels as if its heart has been hand-drawn with a soft graphite pencil. After being open for days, it just finished on peaches and apricots, as if giving up pretending to be about anything else. Grenache (60%) Shiraz (25%), Mataro (10%) and Cinsault (5%). It’s in keeping with my little Grenache theme this week, except it’s from the Yarra Valley!

It’s complex and a wine of many layers. Raspberry and blackberry, plenty of perfume and spice, hazelnut, something in the way of dried herbs and earth. Medium-bodied, no shortage of red and black fruit, rose oil, but also something a little more meaty and savoury in the mix, with fresh acidity, kind of like pomegranate, fine emery board tannin grip, and a fine ‘minerally’ finish of excellent length. 60/25/10/5% grenache/shiraz/mourvèdre/cinsault. The grenache spends 16 months in 1600L seasoned foudre, the rest matured in barriques (15% new for the shiraz). A wine that shows both the potential of these varieties and this blend at Mount Mary. Perfumed and spicy with red and black fruits and a little Mediterranean garrigue. Brightly fruited and with tannins that are juicy and balanced, this medium-bodied wine is already a treat to drink. PHILIP RICH, Halliday Wine Companion

Big fan of Jumilla Monastrell, there's great Monastrell made in Spain, with a ton of character. This particular Monastrell; concentrated with red and dark berries, balanced with a touch of chocolate and savoury components. Great wine and food pairing!  NICK CAPEL, PWS SYDNEY

The grapes are from 13 plots of Monastrell vineyards in La Raja (where the winery is located) between the mountain ranges of El Carche and La Pila. The vines range from 20 to 70 years old sitting at 800 metres, within the wine region D.O. Jumilla, in the south of Spain. Steel tank ferment with 5 months in small French oak.

Red licorice, pastille fruits, and a hint of charry savouriness and scorched earth layered in with sweet, heady spice. Black cherry, black raspberry fruit paint the palate then slowly melt away to reveal spice box and savory herbs then rushes back in with plum, blackberry compote, blueberrie, and blackcurrant that bring the finale to a luxurious finish that trails off with some dark chocolate, and tobacco.

A dry pink style of sparkling, using the classic blend of xarel.lo, parellada and macabeu, along with monastrell to create an amazing pink hue to the wine. Varieties are fermented separately in stainless steel before blending to create the base wine. Minimum of 18 months on lees in bottle before disgorgement, with a tiny bit of dosage at the end.

Dry pink of great elegance. A lovely faded rose pink colour, it smells of gently boozed strawberries, dusty rose aromatics - perfumed without any outrageous fruitiness or excess. Nice false sweetness on entry -the balance is ultimately off-dry, juicy and gentle, with high quality delicate bubbles underpinning the fruit, cutting the fruitiness and running on to a super-gently acid close.

Aged in small apple brandy casks for over 12 months, this rich and generous liqueur is a result of blending pressed French and British heirloom apple varieties with our apple spirit.

Complex and well-structured with baked apple and spice, balanced with firm tannins and cask influence.

Our take on the traditional aperitif from North-West France – enjoy as such or serve with blue cheese or dessert. WILLIE SMITH
