We were super impressed with the latest vintage here. Much more texture and weight then in previous vintage with an emphasis on phenolic grip and slippery fruit. There is lovely chalky, white pepper note on the nose with fresh nashi pear and green apple to the fore. Eric Bordelet Sydre Brut Tendre Apple Cider NVThe biodynamic orchards are comprised of trees upto 50+ years old containing 40-50 varieties of heirloom apples. The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Willie Smiths Heritage Blend Cider 750mlSituated on 115 acres, Wille Smiths is 30 minutes south of Hobart in the Huon Valley, a once thriving apple-growing region that exported apples all over the globe and earned Tasmania the title of the 'Apple Isle'.
Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name. The 2023 Albariño Granbazán Etiqueta Ámbar, sourced from Val do Salnés, undergoes a few hours of skin contact before fermenting and aging eight months on lees. Delicate and pretty, going from fennel flowers to lemon verbena to lemongrass to lemon sherbet. Gentle but surprisingly deep plashy pools of acidity. Orange citrus and tamarind at the core, that over 10 days softened to buttery saffron. Like all the really good, complex Albariños, it has high-frequency intensity. It feels as if its heart has been hand-drawn with a soft graphite pencil. After being open for days, it just finished on peaches and apricots, as if giving up pretending to be about anything else. Franck Lihour is a relative newcomer with only his first vintage in 2014. But within a short amount of time, he has lifted his family's estate, Domaine Castera, to be one of the top producers of Jurançon. His ability to tame the searing acidity with concentrated fruit while keeping the wines bone dry and without ever losing any balance is exceptional. His work in the vineyard, slow & long pressing, time in old neutral oak and use of whole clusters the key to maintaining the knife edge wines he has endeared his fans with.
Waxy citrus, pear and white orchard fruit entice you in while a gentle floral lilt and softly spice nose keep you coming back for more. The palate is refined and electric, with a long, slightly leesy finish, that seems to build and build in on its self as you continue to sip it. This is at once luxurious and broad that seems to paint the flavours across your palate while sitting up, fresh and bright on a web of tightly woven acidity. Very cool!

Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking.
