Eric Bordelet Sydre Brut Tendre Apple Cider NVThe biodynamic orchards are comprised of trees upto 50+ years old containing 40-50 varieties of heirloom apples. The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name. Today the estate is run by two sisters and each as a daughter who is slowly taking over the reins. It's a crazy combination of staunch traditionalism and a modern view on what it means to craft such historically important wines. It is an estate for which we have almost endless admiration, for many reasons not which least is the incredible quality focus they bring to their whole suuite of wines from cru Barolo to this not so humble dolcetto.
If there was ever a wine that could convince you we should be drinking more Dolcetto, then this is it. While Barolo and Barbaresco are the undeniable international stars of Piemonte, Dolcetto is it's heart and soul and a wine that is always on the Piemontese dining table and with examples like this, you can see why. Some dark red cherries and berry fruit are dusted with sweet cake spice and peppery goodness. It's a plush little package is knotted together wonderfully with a firm press of tannin, which sweeps across the palate to clean everything up at the back kept fresh by a jolt of bright acidity. The 2023 Albariño Granbazán Etiqueta Ámbar, sourced from Val do Salnés, undergoes a few hours of skin contact before fermenting and aging eight months on lees. Yellow in color, it presents aromas of white peach, orange blossom and candied citrus. The palate is dry, light and delicately fresh with a slight spritz adding texture. Delicate and pretty, going from fennel flowers to lemon verbena to lemongrass to lemon sherbet. Gentle but surprisingly deep plashy pools of acidity. Orange citrus and tamarind at the core, that over 10 days softened to buttery saffron. Like all the really good, complex Albariños, it has high-frequency intensity. It feels as if its heart has been hand-drawn with a soft graphite pencil. After being open for days, it just finished on peaches and apricots, as if giving up pretending to be about anything else. Cavallotto Dolcetto d'Alba Vigna Scot 2022
Cavallotto’s single-vineyard Dolcetto Vigna Scot hails from 2.3 hectares of 30-year-old vines within Castiglione Falletto’s legendary Monprivato vineyard. These Dolcetto vines face east, meaning it’s a cooler and later-ripening part of the vineyard. The mature vines, low yields and traditional winemaking on these great soils result in a layered, deep, remarkably serious Dolcetto.
While the vast majority of Langhe Dolcetto is raised in stainless steel, the Cavallotto family prefers to use cement tank and 5,000-litre Slavonian botti. This polishes Dolcetto’s tannins and helps to avoid its tendency for reduction. As always, this is a Nebbiolo drinker’s Dolcetto (if you know what we mean) and one that punches well above its weight. What a delicious Dolcetto. It has juicy, mouthwatering texture bursting with vibrant cherry and spice and cosseted by palate-friendly, polished tannins. Already open for business yet so lovely and fresh, it is another sophisticated effort that is as deep and multifaceted an expression of this variety as you are likely to find.

Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. Produced from pear trees estimated to be about 300 years old. Poiré Granit has 25-80 grams of sugar per liter, yet it doesn't taste particularly sweet. Santiago Ruiz Rosa Ruiz Albarino 2023A touch of skin contact and extended lees maturation gives this wine a stonier feel than the O Rosal bottling.
