Disznoko Late Harvest Furmint 2020 500mlLászló Mészáros makes this late-harvest wine from mainly botrytised Furmint grapes (along with small amounts of Zéta and Hárslevelu), which have shrivelled to around half of their original volume. Termed Késói Szüretelésú in Hungarian, there is no berry-by-berry selection here as there is for Aszú wines. Instead, selected botrytised bunches and grape clusters were harvested and macerated briefly before being pressed. The wine was racked into used French oak (including barrels from Disznóko's sister property, Château Suduiraut in Sauternes), where it matured for six months.
The short aging has kept Furmint's pungent and fruity aromas and flavours intact and guarded its energy and freshness. The palate has a fine balance of candied fruit, honeycomb sweetness and acacia. This wine has residual sugar of around 130 g/L, which is well-balanced by punchy acidity and gentle grip, giving a vibrant and modern expression of Tokaji.
The balance and freshness mean you don't necessarily have to serve this with dessert. In fact, in Hungary, this kind of wine is often consumed as an aperitif or with goat’s cheese or pâté on toast.

This Appellation 'Cremant D'Alsace" is made using the traditional method with a secondary fermentation in bottle. It's aged for 32 months before disgorging.

Zalto BalanceThe idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."
So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Zalto recommends the glass for deep, complex whites-Chardonnay and full-bodied Riesling, for example-to fully show their depth and subtlety while harmonising aromas and flavours without concentrating one element. Its Sylvaner, a grape often treated as an afterthought in Alsatian wine-production circles, is especially noteworthy. I do not feel that I am exaggerating when I describe it as a world-class wine the fact that it ages extremely well is an added bonus.

This is a granitic site, at 400m of altitude, enclosed by forest, looking south-east. Matured in a mix of stainless steel and used 300-liter barrel, because there was not enough wine to fill a foudre , this spent 11 months on gross lees. The nose is shy, with mere suspicions of lemon.
