Eric Bordelet Sydre Brut Tendre Apple Cider NVThe biodynamic orchards are comprised of trees upto 50+ years old containing 40-50 varieties of heirloom apples. The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Dry or Trocken style Rieslings from the Mosel don't get as much attention as the sweeter versions do and that is a shame. If this wine is anything to go by, I hope they are making bucket-loads more because this really floats my boat. It's all about fresh diced pear, green apple, a touch of peach and ripe citrus throughout. The palate sings with pure fruits, lemon drop and crushed white rock. Its finely shaped, zipping along buoyed by crystalline acidity that pierces the gently sweet fruits. It feels so full of life, bouncy and fresh. Love the purity of it all finishing emphatically dry but with plenty to keep you going back for more. I love the sweet stuff too, don't get me wrong, but this I could drink all day long. Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. Bordelet worked as sommelier in the leading 3 star Parisian restaurant, ‘Arpege’ where he became deeply familiar with the top winemakers and wineries of France. In 1992 he took over the tiny patch of family farmed orchards in Charchigné, in the heart of Normandy’s premium Cider producing area. Since then he has set about rescuing the ancient ‘heirloom’ varieties of pears and apples that produce tiny quantities and amazing flavour.
Produced from pear trees estimated to be about 300 years old. Poiré Granit has 25-80 grams of sugar per liter, yet it doesn't taste particularly sweet. This is due to the tannin and acidity, which Bordelet says is twice as high as the apple! Stunning as aperitif or with cheese or desserts. With just 4% alc/vol this can be enjoyed any time. Weinbach Sylvaner 2022This is our second shipment of Weinbach’s Sylvaner, drawn from old vines in the Clos des Capucins. Sylvaner may have fallen down the Alsatian pecking order in recent decades, but you could hardly tell that from tasting Weinbach’s example. Old, biodynamically tended vines and low yields are just two key components to the quality and style. The fruit was pressed gently as whole clusters, then fermented with indigenous yeasts (an element of the terroir that enhances depth and complexity in the wines) in old oak vats. Sylvaner boasts relatively high acidity, which works a treat with the early-ripening, sandy and rocky terroir of Capucins. The result is a deliciously fruity, taut, salivating white with complex aromatics and plush concentration.
A biodynamic Sylvaner among thorns, the 2022 opens with golden orchard fruits, aromatic salts and a twist of savoury herbs, while the palate is packed with silky fruit and balanced by a mouth-watering spine of crystalline acidity. Impressive length, too.

Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.
