Each grape (Sauvignon Blanc) is sorted upon receipt of the harvest, we work by gravity in order to respect the natural circuit of vinification. Press lightly to maintain optimum fruitiness. Assembly of 50% limestone, 30% clay-limestone and 20% flint. Each soil is vinified separately in thermo-regulated stainless steel vats, the limestone brings minerality and finesse; the clay-limestone brings the fruit, the richness and the flint brings the structure and the minerality. Unique, precise, chic, timeless and divinely good.

Domaine Vacheron is one of Sancerre’s elite properties, producing both white and red Sancerre wines of amazing purity and definition. The domaine has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .

Flinty sparks mix with  fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis. It slithers along, finishing with a mouth watering saline finish. It’s a refined and stylish Sancerre, so very damn delicious. GABRIELLE POY

The 2017 Turpino is quite reticent, which is surprising given the style and personality of the year. Black cherry, pine, menthol, licorice and chocolate develop nicely over time. Readers should give the 2017 at least a few years in bottle, as it is not at all ready to drink now. The 2017 embodies the house style at Querciabella these days nicely. The wine is rich and deep, but not at all overdone. (95) ANTONIO GALLONI

Lustrous deep crimson. Deep red- and dark-fruit nose with hints of dark spice. Savoury rather than sweet or ripe on the nose... Hint of earth and dried moss. In the words of Sergio and Lorenzo, their Aromatico Bitter is a "collision… made by mixing cold with heat, bitter with sweet, bright red with the brown tones of the earth". With a partially different mix than for the Chinato, here we have a neutral alcohol, sugar, distilled water and a natural infusion of aromatic herbs, which include gentian, cinchona, liquorice, wild cherry and cardo gobbo. This is the most renowned pago in Jerez, planted on pure albariza, a white soil high in calcareous microfossils. Equipo Navazos sources the 115 from a bodega that farms their vineyards entirely by hand and without chemical inputs.
My heart stuttered a bit when the glass was set in front of me: rather than the pale-lemon colour I've come to expect in fino, it was a soft apricot, and I worried that it was past its prime. It was not. It smelled fresh and characterful - Could a wine be more Spanish? It smells like the sea, rich, fatty Valencia almonds, orange zest kneaded into yeasty bread dough, a touch of Manzanilla olive brine and a caramelly tang like birch syrup. The NV La Bota de Fino 115 is still 100% from Macharnudo Alto, and they are trying to make a slightly more fluid wine, not like a Fino Amontillado, which was the case with some bottlings coming from the selection of very old soleras. It's slightly different from the previous edition, number 91; this is slightly younger, between seven and eight years of age, but it keeps the same style, just a little more approachable. Bottled a few days ago. From the Machurnado vineyard. They have decreased the average age by a couple of years so it's seven or eight years on average and the wine is more refreshing and not so uncomfortably concentrated. Firmer and nuttier than I Think Manzanilla with real tang and bite. Hint of molten dry treacle. Real grip. Neat and convincing. Not yet open - needs a couple of months. JANCIS ROBINSON MW

Wheatie, course ground grains and a background hint of fresh toast with wildflower honey. That alone had me coming back. But the aromatics are multidimensional, they run through a wild, complex and beautifully constructed spectrum, from perfume to damp stone, hay to honey roasted nuts. Crazy nuance and head spinning detail. There is so much involved here, but it is by no means bombastic. These details are, at times, faint little suggestions that mingle amongst more obvious characters. It takes time in the glass and air to shake loose some of the more reticent attributes. But they are so inviting and alluring. It is worth just sitting on a glass for a while. I poured some aside to keep coming back to over a couple of days.
The subtle, though not shy, nose does not prepare you for the impact on your palate.
It hits with some force, there's a lot of flavour here and it begins on impact. From the moment it touches your mouth it is a crazy dance. Intense, unusually concentrated and powerful for the style. Loaded up with character and brimming with confidence. This is a Sherry of presence and stature, however it does not depart from the things that we all love in Fino. Salty. Oh, so salty. Fresh feeling, it pops with a sense of spring in the mouth but then leans in to autumnal notes as it slowly, so very slowly, fades away. A final twang of salinity and chalky texture on the incredibly long finish, reminds you exactly what you are drinking.
This is both thoroughly and utterly delicious as well as deeply convincing and totally spellbinding. I love it! ROSCOE

Here is more nutty, dried malts, slightly stale toasted sour dough. Deeply impressive. Complex but the spectrum is more on the savoury side nearly meaty aspects mingle with a wild estuarine note that carries with it pangs of salinity and twinges of bitter lemon rind that puckers your mouth but sets the salivary glands quivering. The way is stains the palate with flavour and gains volume in the mouth you think it is higher in acidity than it is, when in actuality its kind of caressing and fulsome, just those little twangs and pinches I mentioned poke out and add a sense of tension as well as tactile nuance. In some ways it feels like great Chablis in that regard, just in the saline whacks that hit your mouth in unexpected moments.
The other wine deserves your attention this demands it. Unreal. This is a little more cerebral, a bit more contemplative, don't contemplate anything too serious though, maybe what you should eat with it. Either way it's attention grabbing.
Not really sure my ramblings do either wine justice but hey, they are both so damn good that I hope they will speak for themselves. ROSCOE

Fruit from a 1996-planted vineyard. Four weeks post-fermentation maceration, matured in French barriques (35% new) for 15 months. Virtually identical winemaking to the Original Vineyard Cabernet Sauvignon but, as always, this is the denser, more powerful and structured wine. On the nose there's a core of perfectly ripened black fruits, crushed violets, dark chocolate and graphite. The medium bodied, firmly structured and persistent palate is equally good, and anyone fortunate enough to still have a bottle 10–15 years (if not longer) from now will be well rewarded. 97 PHILIP RICH, wine companion

Organic/biodynamic sauvignon blanc. The philosophy finds winemaking practice rooted in the historical past - old mentality about the wines.

The 2019 Camalaione is a dense, full-bodied wine. It is the most opulent of the wines in this range and also one that is the most similar to how these wines were made in the past. Deep, inky and layered, Camalaione has a ton to offer. The 2019 was vinified in amphora and spent two years in French oak barrels, 50% new, then a year in cement. One of Australia’s great cabernets. This from a cooler season highlights and accentuates the typical bright red fruits and blue fruit mix, especially on the nose. It’s aromatic and perfumed with an African violet scent. The palate as always is so exquisitely balanced and refined. Since 1989 the cabernet has been augmented with the floral bright fruit of cabernet franc and the darker robust black fruits of petit verdot. The palate delivers with a gentle restraint yet there is power deep within. The chalky tannins define a long and focussed finish. A deceptive medium bodied wine that will cellar for many years. Deep bright purple-red colour leading into a stylish bouquet of sweet mulberry and other berry fruits, violets and cassis, succulent and mouth-filling, with masses of fine emery-like tannins that run the length of the palate adding authority, structure, length and refreshment to the aftertaste. Really delivers as you might expect from this excellent concentrated and powerfully frame vintage in Margaret River. It’s dominant cabernet with smaller portions of merlot, cabernet franc and malbec. Typical of this wine since switching to biodynamics, it is bright and brilliant with a nervy tense energy to drive the palate. The succulent fruit is harness by fine chalky tannins and neatly played oak of which 55% was new. A wine of extraordinary elegance and poise with a few of many decades. (98) RAY JORDAN

Needless to say, Margaret River enjoyed another superb vintage with the 2022 season. Slightly cooler, Cullen report that it was a vintage of “immense perfume and texture”. The wine is a wonderfully vibrant purple in colour. The nose gives up plums, cassis, spices including nutmeg, chocolate, mocha, bay leaves, cigar box notes – think a freshly opened box of Cohiba Siglo VI – and near perfect oak integration. This is finely balanced and exhibiting immense length on a palate that sees the emergence of aniseed, mulberries and coffee beans. An alluringly supple texture with the silkiest of tannins, though plenty of them – there really is some grip here. This will easily sail through fifteen to twenty years in a good cellar. Diana Madeline. The name evokes a lot of emotions, for what the woman stood for then and what the wine stands for now. The 2021 vintage equals 50 years of cabernet sauvignon plantings at Cullen. When released in early 2023, it was on what would have been her 100th birthday. It’s a wine that can come from nowhere else, so strong is its sense of place. Expect to swoon over aromas of roses, violets and mulberries doused in baking spices, a ferruginous quality as much as detailed if persuasive tannins. It’s complex, complete and structured. Very deep, dark, impenetrable purple colour; a gorgeous fragrance of spicy superripe berries and a hint of licorice, super concentrated and almost essency. Traces of soy sauce and nori. The wine is highly concentrated on the palate; powerful, profound and rich, with masses of sweetly ripe berry fruit and no sign of herbal varietal touches. A profound and multi-dimensional cabernet that will richly reward long-term cellaring. It drinks superbly already but it would be sacrilege to open it before it's had more time to build the tertiary complexity that we know will come with time. (99) HUON HOOKE, therealreview.com

The 2021 John Riddoch Limited Release Cabernet Sauvignon is a brilliant wine. It is achingly intense yet is defined by its levity, which is not a common attribute in Coonawarra Cabernet Sauvignon. The wine expounds the virtues of the red gravel in which the fruit was grown, via its iodine and crushed shells, cassis and blood, sweet marrow and tobacco. It tastes so clearly of the place, which is a wonderful thing. The back palate swells with flavor, framed by the earth and the attuned oak. This is a tribute to the earth, an ode to it. Plentiful tannins bob along on the current of fruit. This will cellar interminably. It's up there in both quality and feel with the 2010, or so I think. 13.5% alcohol, sealed under screw cap. One of the best vintages in Coonawarra for many years. Little wonder this release of the John Riddoch is one of the best since the initial release from the 1982 vintage. Aromas of violets and red berry with a slightly cherry glaze character adding further intrigue. The palate is medium weight and refined but with tremendous power and persistence. A combination of hogsheads and barriques has been used to deliver the perfect level of oak. One of the best of these I can recall. (98) RAY JORDAN, rayjordan.com.au

"In one word - 'epic'.  Having just returned from ten days in Bordeaux tasting a vast number of youthful Cabernets, among other styles of wine, if this beauty had been slipped into the mix, it would have lounged somewhere near the top of the pile…John Riddoch is more akin to an elite Saint-Estèphe than a typical New World Cabernet…'21 JR is pure, stunningly plush, deeply fruited but seemingly weightless and incredibly detailed. It is a superb thoroughbred with impeccable balance, and it is as relevant for an old-world geek as it is for a new-world disciple. 70%Cab. Sav. 30% Sangiovese.The 2017 Camartina is going to need a few years to open. That will be helpful as the wine ages, but it also means the Camartina does not have the opulence readers are likely to expect in this warm, dry year. Poli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. Artisanaly distilled and obtained from a unique infusion of juniper berries, muscat grape, mountain pine, cembra pine, mint, cardamom and coriander reminding of the Asiago plateau in the north of the Veneto region, where the Poli family comes from. This is a heady and perfumed gin that is at once powerful and refined. A truly unique product that speaks of its home in the hills and of the philosophy of this family run operation.

In addition to this month's Italian Mixed dozen we thought we would like to offer a Negroni pack featuring this incredible product. We have matched it with our very own Vermouths and Bitters from its western counterpart Turin Vermouth. Their philosophy is to maintain tradition through the production while sourcing aromats and herbs from all over the world and based on the local wines of the Piemonte's hills. Together this forms once of the world great classic cocktail- the Negroni.

This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni.  A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.

Ingredients

1 oz. Italian Bitters
1 oz. Gin
1 oz. Sweet vermouth

Instructions

Stir Tuve Bitters, gin, and vermouth in an ice-filled tumbler; garnish with orange slice.

Super deep and complex, rich and saline, with a pure developed perfume. Mapled acorn-rich, lightly glyceric, deeply spiced, strong at the rim, releasing to an ethereal boof from a structural base. Fine glazed toffee nut, orange blossom, sunflower and pumpkin seeds, dried chestnut honey, toasted hazelnuts, delicate tangerine caramel, brandied citrus, sandalwood. The 2020 Camartina is a super-classic edition of this wine. Cabernet Sauvignon drives the blend, but there is also a ton of site character. Readers will have to be patient, as this is very much a wine for the cellar. Strong mineral inflections, black pepper, lavender, mint and licorice add layers of aromatic intrigue.
