Made in stone lagars and aged in cement tanks along with some large old wooden vats, it's a very typical Dão blend of Touriga Nacional, Tinta Roriz (elsewhere, Tempranillo), Alfrocheiro and Jaen (aka Mencia).

A Descoberta means 'to be discovered' and the somewhat mystical label, a box tagged 1942 is a folkloric reference to an early version of a time capsule a box hidden in the stone walls of the house of Passarella containing a will to be opened 50 years hence and directing the riches of the box be re-distributed to the poor. A lovely wine supple, fleshy and spicy, with extra delicate tannin and oak. From lead-off, the cherry-chocolate fruit really shows the Dao granite, and is laden with wiry dark herbs. In the mouth, it's fleshy-meaty and mineral fresh - round with good movement and fruit-earth interplay. It has excellent presence in the mouth but is not reliant on weight for the show. Wonderfully composed, it sits and radiates, effortless in affect. Gorgeous delicate tannin is the frame, rimming the mouth and allowing the fruit and spicy acid to radiate delicately. A wonderful advertisement for varietal blends.

Estate grown field blend of Pinot Gris, Pinot Blanc, Gewürztraminer, Chardonnay Musqué, Riesling and Grüner Veltliner. Up to 7 days of skin contact before pressing. Natural co-ferment and maturation in a Pozvek foudré for 9 months on full lees. 100% malolactic fermentation. Bottled in January 2024 unfined and unfiltered.

Amber hue in the glass, this wine is complex and highly aromatic with scents of fresh apricot, musk and lychee. Peach, beeswax and subtle smoky notes. A creamy mid palate with a refreshing saline finish.

This Godello comes from old vineyards planted right next to the Sil river, in the Seadur village (Ourense), cultivated in slate and decomposed granitic soil. Destemming and short maceration (>4 hours). Soft pressing and static racked of the must in preparation for a slow temperature controlled fermentation in stainless steel tanks.

Translucent and bright pale yellow. In the noseis intense, predominant aromas of ripe apple, water pear, white flesh peach, framed by fennel and anise. In the palate is powerful, voluminous, as well as refreshing with a silky and pleasant finish.

Etiqueta Ambar uses grapes from vineyards that are over 40 years' old, mostly in Cambados and Meao in the Salnas Valley on sand and granite soils. Almost Riesling like in terms of structure and acidity (Diego Rios worked in the Mosel Valley) this is stony and intense,with layers of lime cordial, green apple and lemon zest and impressive extract. 2024-29. TIM ATKIN MW

The 2023 Albariño Granbazán Etiqueta Ámbar, sourced from Val do Salnés, undergoes a few hours of skin contact before fermenting and aging eight months on lees. Yellow in color, it presents aromas of white peach, orange blossom and candied citrus. The palate is dry, light and delicately fresh with a slight spritz adding texture. Delicate and pretty, going from fennel flowers to lemon verbena to lemongrass to lemon sherbet. Gentle but surprisingly deep plashy pools of acidity. Orange citrus and tamarind at the core, that over 10 days softened to buttery saffron. Like all the really good, complex Albariños, it has high-frequency intensity. It feels as if its heart has been hand-drawn with a soft graphite pencil. After being open for days, it just finished on peaches and apricots, as if giving up pretending to be about anything else. Even the entry-level white 2020 Candea Blanco, a regional blend of equal parts of Dona Blanca, Verdello and Treixadura fermented and kept with lees in stainless steel for one year, shows character, cleanliness, precision and freshness beyond the price point, and it transcends appellation and vintage and is offered with some time in bottle. It has only 12.5% alcohol and an expressive nose of herbs and flowers, and it is balanced, harmonious and elegant and finishes dry and long with a tasty and salty twist. Handago’ means Handa area/village/city where Kunizakari has been located since 1844.

This Sake is made with 100% local rice from their contracted rice farmers. Delicate citrus tones on the nose, clean and light texture and Umami from the rice, fully flavoured with fresh grape fruitiness.

‘Karakuchi’ means dry and crisp, and this Sake has a beautifully dry, crisp and clean finish.

László Mészáros makes this late-harvest wine from mainly botrytised Furmint grapes (along with small amounts of Zéta and Hárslevelu), which have shrivelled to around half of their original volume. Termed Késói Szüretelésú in Hungarian, there is no berry-by-berry selection here as there is for Aszú wines. Instead, selected botrytised bunches and grape clusters were harvested and macerated briefly before being pressed. The wine was racked into used French oak (including barrels from Disznóko's sister property, Château Suduiraut in Sauternes), where it matured for six months.

The short aging has kept Furmint's pungent and fruity aromas and flavours intact and guarded its energy and freshness. The palate has a fine balance of candied fruit, honeycomb sweetness and acacia. This wine has residual sugar of around 130 g/L, which is well-balanced by punchy acidity and gentle grip, giving a vibrant and modern expression of Tokaji.

The balance and freshness mean you don't necessarily have to serve this with dessert. In fact, in Hungary, this kind of wine is often consumed as an aperitif or with goat’s cheese or pâté on toast.

A blend of vineyards in Clare Valley blending cabernet sauvignon, malbec, sangiovese and grenache. Clever. Their own ‘classico’. The new label reversed the colours on this one, more black on black with white font, and it looks sexy as.

Gorgeous wine. Supple, succulent, lush with dark fruit character, new leather, tobacco, mint and sage leaf characters with a fine, graphite minerally character through it all. It feels warm-hearted and kind of generous but keeps to the medium weight brief. It rolls with flavour, energy and tension of refined tannins through a long, mouth-watering finish. Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end. 

Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.

The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.

Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.

Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.

The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.
