The Domaine itself is plonked on the hills overlooking Eauze the capital of Armagnac. Its certified organic and has eighty acres of vines that grow on the gentle hills of sand and fine silt soils. All harvests are done by hand and the domaine does not use any chemical fertilizers or pesticides. This is a dry and textural blend of Colombard, Ugni-Blanc, Sauvignon, and Gros-Manseng.

They have done it again! This is my go to white for summer with a lovely lemony, floral lilt and powdery, perfumed nose. Gentle and bright with clean and crisp flavours of orchard fruits and white nectarine. Its uncomplicated and delicious with clean, crunchy fruits and a zippy, minerally finish. Ridiculous value. A very fresh dry white with yellow apple, lemon, fresh garden herb and snowpea aromas. Crisp and structured with a nice interplay of lively acidity and creaminess. Long, delicately spicy and herbal finish that’s very clean. A cuvee of 32% gewurztraminer, 25% pinot gris, 15% riesling, 15% pinot blanc, 10% sylvaner and 3% muscat. Drink or hold. Quite possibly the most delicious Pobblebonk to date. Riesling, friulano, pinot grigio and ribolla gialla are the friends, each fermented wild in used French oak, on full solids and later blended. It’s heady with meadow flowers, lemon blossom and hints of lemon verbena, really spicy with nutty, leesy aromas, and the palate is both textural and alive with fine acidity. Light to mid straw colour in the glass, the bouquet savoury with some nutty notes possibly from barrel ferment, adding layers to the floral and spicy fruit aromas. Deliciously intense fruit on palate with a touch more dimension than the Quealy pinot grigios. It's truly more than the sum of its parts. Argyros Atlantis White 2022 is a refreshing and elegant white wine from the island of Santorini, Greece, produced by the renowned Argyros Winery. This wine is crafted primarily from native grape varieties, including Assyrtiko, which is famous for its vibrant acidity and minerality, along with smaller amounts of Athiri and Aidani. These grapes thrive in the volcanic soils of Santorini, imparting a distinctive character to the wine.

The 2022 vintage of Atlantis White is aromatic, with fresh citrus notes, green apple, and a touch of floral character. On the palate, it offers a crisp, clean profile with a zesty minerality and a slightly saline finish, reflecting the island's coastal terroir. It’s a versatile and delightful wine.

Coffee Cocktail: Tonka Bean . Vanilla . Coffee . Orange

Iconic 80s model asked Soho Brasserie bartender, Dick Bradsell to make her a cocktail to “wake me up & f***k me up". A shot of espresso into a Black Russian recipe, created the ‘EspressoMartini’. Ours, tonka bean & fresh vanilla––think almond & baked goods–– gently supported by fragrant orange, & cold brew coffee––to wake your senses (not f**k them up).

To serve: Chill in the freezer for half an hour prior to serving. Pour over ice, garnish with an orange peel.

This Godello comes from old vineyards planted right next to the Sil river, in the Seadur village (Ourense), cultivated in slate and decomposed granitic soil. Destemming and short maceration (>4 hours). Soft pressing and static racked of the must in preparation for a slow temperature controlled fermentation in stainless steel tanks.

Translucent and bright pale yellow. In the noseis intense, predominant aromas of ripe apple, water pear, white flesh peach, framed by fennel and anise. In the palate is powerful, voluminous, as well as refreshing with a silky and pleasant finish.

Etiqueta Ambar uses grapes from vineyards that are over 40 years' old, mostly in Cambados and Meao in the Salnas Valley on sand and granite soils. Almost Riesling like in terms of structure and acidity (Diego Rios worked in the Mosel Valley) this is stony and intense,with layers of lime cordial, green apple and lemon zest and impressive extract. 2024-29. TIM ATKIN MW

The 2023 Albariño Granbazán Etiqueta Ámbar, sourced from Val do Salnés, undergoes a few hours of skin contact before fermenting and aging eight months on lees. Yellow in color, it presents aromas of white peach, orange blossom and candied citrus. The palate is dry, light and delicately fresh with a slight spritz adding texture. Full bottle 1,245 g. Tasted blind and then tasted again (not blind) several times over several days. Certified sustainable (Fair’N Green). Several months on fine lees.
Delicate and pretty, going from fennel flowers to lemon verbena to lemongrass to lemon sherbet. Gentle but surprisingly deep plashy pools of acidity. Orange citrus and tamarind at the core, that over 10 days softened to buttery saffron. Like all the really good, complex Albariños, it has high-frequency intensity. It feels as if its heart has been hand-drawn with a soft graphite pencil. After being open for days, it just finished on peaches and apricots, as if giving up pretending to be about anything else. Let’s be honest - cellos sound kinda nice and we all pretend to love them if we are on a  first date, but most of the time: BORING. Not any more. This cello is a disturbed, unhinged, raging hot mess of a drink. How, you ask? We infused zesty Australian blood orange peels with the dried husks of ancho chilli. It’s smokey, vibrant, zesty, bitter and sour.

It’s everything you ever wanted in a drink but were too self-concious and idiotic to ask for. So top it with Prosecco, top up your Negroni or drink it like a heathen - because this little number is music for your mouth. A symphony for your senses. A tango for your tastebuds. You get the drift....drink it.

Frank Moorhouse in his book Martini - a memoir states, "Every time it is served, the martini represents a journey towards an unattainably ideal drink". The idea of endlessly pursuing a perfection that does not exist is something well known to passionate winemakers. Having a winemaking background we thought we would delve into the mysteries of gin production. This was largely brought about by our fascination with martinis and all things gin.
The notion of the "unattainable ideal drink" led us into a series of trials and experiments and we have become fully immersed in the alchemy of batch distillation and the extraction of exotic and local botanicals. The MGC doffs its hat to London Dry Gin with the two major components being juniper berries and coriander seed. There are 11 botanicals in total (not including a lot of love) with the grapefruit peel and rosemary coming from the garden at Gembrook Hill Vineyard. The other botanicals are macadamia, sandalwood, honey lemon myrtle and organic navel orange, which are all sourced from Australia. The exotics in the mix are angelica root, orris root and cassia bark.

Each botanical is distilled separately and then blended to our recipe - essentially a winemakers approach. We use a copper pot baine-marie alembic still. A still traditionally used for making perfume. This allows us to preserve the delicate nature of the botanicals we work with. The final component is the water used to break the gin back. We use Gembrook rainwater which is pure and fresh and allows the botanicals to shine through. At only 60kms from Melbourne this local source contributes to the definition of the unique "Melbourne Dry Gin" style.

The MGC is not chill filtered. We didn't want to take out the oils that contribute so much to the aromatics and mouth feel of the gin. So when the gin is very cold the oils become slightly insoluble and form a light haze. The French use the word louche to describe this. In a different context someone who is louche is of a shady character! Each bottle is numbered to reflect the small batches in which it is made. ANDREW MARKS, Distiller & Winemaker
