OK so its not the usual Champs-Élysées finish and this stage isn't even the finish line but we have to have a sparkling at some point. Eric Bordelet Sydre Brut Tendre Apple Cider NVThe biodynamic orchards are comprised of trees upto 50+ years old containing 40-50 varieties of heirloom apples. The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

We have long loved the wines of Damien Pinon and when we first tried this little number we were pretty stoked. Great sparkling Loire is such a treat. It captures all that zingy, racy, pure goodness of chenin blanc while bringing the added dimension of bubbles into the equation. They seem like a perfect partnership and we absolutely love this wine.
Quince and granny smith, talcum powder, quartyz spice and a gently honeysuckle, floral element that floats deliciously around in the background. Its pure and precise but fills out across the palate with each sip. Sometimes, Loire Sparkling is a little too lean but this deliver plenty of fruit at the same time to balance of the fine, minerally acidity.

Makes you smile this wine. There's a generosity of aromatic that leads you through baked pastry, fresh cut stonefruits and then an invogorating punch of crushed stone minerality puffs into view. It's kind of like a Champagne letting it's hair down on the palate as well, genrosity of well-defined fruit is edged with minerality and oyster shell while the fine bead cinches and tucks in the effusive edges. Its got enough in it for the serious-minded fizz drinker but is also playful and generous enough to keep you pulling it out of the fridge for pretth much any pcassion. MICHAEL MCNAMARAThis thing hits it out of the park in terms of delivering quality and value. It doesn’t hold back with packing in the flavour either. The fruit is present and accounted for, with a nice lick of minerality and some back end punch, but what is really striking is the yeasty, brioche, burnt toast mealy characters that immediately greet you as you take your first sniff. It has all the bells and whistles. As a Champagne nerd I love to see that in the wine, as distinctly different to my fetish for Grower Bubbles, give me some of that expressively yeasty goodness. Louis Picamelot Cremant Les Terroirs Rose NVSiren song aromatics of strawberries and cream, a little tarragon and mineral and maybe a little vanilla lead you head first into the glass. So enticing and welcoming and it continues on the palate with the same ebullient fruit held within a soft and pillowy mousse creating an almost sensual decadent impression. Alongside that though is real energy and vigour elevating the fruit and spice (and a little sage) element in the wine. It's so beuatiuflly put together this wine and would leave a number of it's Champagne cousins for dead and ashamed of their pricing. Gorgeous sparkling. MICHAEL MCNAMARA
One of the crew called this “soft and mellow” I can see where that comes from, it certainly has a lovely mouth filling quality and all those billowing soft bubbles provide such a sensual cushioning effect, but the wine lacks nothing for racy energy either. I don't think its soft, I think it's lush!
Also, I love the fine chalkiness that punctuates the fruit. Like its BdB sibling the lights are flashing and the sirens are cranked up, they don’t shy away from the winemaking and let’s be honest, that’s what makes Champa… sparkling wines like this so exciting. Even with that distinct autolytic creaminess the wines overall impression is one of flirtatious elegance. Mittnacht Freres Cremant d'Alsace Extra Brut NVMittnacht Freres have been producing biodynamic wines for quite some time and are well known for their refined wines. They own some parcels in the Grand Crus like "Rosaker" or "Osterberg". We are looking forward to introducing more of their range some time soon.
This Appellation 'Cremant D'Alsace" is made using the traditional method with a secondary fermentation in bottle. It's aged for 32 months before disgorging.
Subtle sparkling with notes of pears, apples and peach, on a festival of light and very elegant bubbles. The palate is dry, notes of granny smith apples and hazelnut, built around a nice, ripe acidity. Delicious festive number !

Brocard Pierre Champagne 'Tradition' NVBrocard Pierre's entry-level and only blended-grape expression of Champagne, Cuvée Tradition Brut, spends three years on the lees in bottle before release, which in our opinion, makes it one of the best quality-for-value wine of Champagne.
The Tradition is made of Pinot Noir (80%), Chardonnay (10%) and Pinot Blanc (10%) grapes from vineyards planted on clay-calcareous soil near Celles-sur-Ource. 2018 vintage reserve wine makes up the dominant base, while 30% comes from different réserve vintages. The juice was fermented in oak (15%) and stainless steel (85%) at controlled temperature. The wine then spent 4 months in stainless steel, and it was aged on lees for 2.5 years. It has 6g/l of dosage.
A flattering nose dominated by the Pinot Noir. Good harmony in the mouth, strength associated with freshness but not heavy accompanied by a slightly mentholated finish. Ripe citrus. Unctuous mousse. Chalky, mineral and saline and mouth coating. Generous autolitic notes.

Thierry Fournier Blanc de Blanc NVJulien explains that the Marne Valley vines sit in clay limestone soils, often giving richer Chardonnay notes than fruit from the Cote de Blancs. That said this is still very, very precise and fine with a rich mid palate for sure but then a precise, linear finish. To describe the flavour profile as ‘Chablis with bubbles’ would be perhaps to over-simplify things but this certainly makes for a sleek yet flavourful NV. Pol Roger Brut Reserve NVA complex, reliable Champagne that would show well in all occasions thanks to its freshness and class. Drawing on all three grapes (chardonnay, pinot noir and pinot meunier), this has a complex grilled-nut and autolysis character overlayed across red berries and citrus fruits. Nougat, praline, white pepper, spice and nectarine were first to the page for this taster, but there is much more behind that, the sugar discrete yet edifying, the long yeast ageing responsible for a happy and altogether luminous marriage of power and finesse. the wine wafts from the glass with an alluring bouquet of green apple, brioche, pastry cream and buttered toast. On the palate, it's medium to full-bodied, impressively layered and complete, with a crisp but fleshy core of fruit, a youthfully frothy mousse and bright acids, concluding with a delicately chalky finish. This is one of the very finest—as well as among the most consistent—non-vintage brut bottlings from any of the Grandes Marques, and comes very warmly recommended. Equal parts Chardonnay, Pinot Noir, and Meunier. It pours a bright silver straw hue and is fresh on opening, with a floral perfume of white flowers, fresh pear, and fresh almond. Medium-bodied, it’s attractive and approachable, with juicy peach fruit that fills the palate, although it stays refined, with a pinpoint mousse and a clean finish. This shows wonderful nuance and depth all the way through to the long finish, with bright aromas and flavors but less of the toastiness than some of the house's other wines.
