The 2018 Champagne Les Jeattes [sic] Maceration Rose is a medium salmon/orange color and is characterized by maceration, with 30% of the maceration process used to extract the spice, which is profound on the palate, reminiscent of pink peppercorn. The dosage is lower here, but you have the sensation of candies with cherries, quince, and stony, rocky earth. It's silky and stony in its texture, with a delicately rounded mousse. It's delicious now, but it can also improve with time. AUDREY FRICKE
