Amontillado starts life as Fino and after the flor has died (either naturally or by fortification the wine) is left in oak to age/oxidise for 15 years plus. In the case of the Romate 'NPU' the solera is over 30 years old. The resulting wine develops nuttier richer aromas and flavours but maintains some of the freshness and raciness of the Fino from which it descended. Ideal wine as an aperitif or with lighter tapas style dishes.PWS
