Champagne
The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.
The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.
In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

R.Pouillon Les Chatignieres Champagne NV100% pinot meunier
A sweetness here, not sweet-sweet, but there's a richness and fruitiness that comes with this wine. Also a splash of orangey-pink colour too. Scents of candied almond, white strawberry, sea spray, stone fruits, a touch of whisky, mandarin, unusually, it's outside of the box for sure. The palate repeats a similar profile, a touch of pink ham savouriness in there, the rest like the bouquet; light fizz, crunchy texture despite the fruitier profile. Creamy elements through the finish too. It's kind of all over the place but finds a coherency. A really compelling, talking point Champagne, and really enjoyable. MIKE BENNIE, winefront.com
Meunier a great grape for Champagne in the same way Aligoté is for Burgundy. White peach, almond, a bit of a musky and animal character, peanut shells. Frederick Savart L’ Ouverture NVThe NV Extra-Brut L’Ouverture is a bright, exuberant Champagne. Crushed rocks mint, white flowers, apricot, tangerine peel and citrus confit all race out of the glass. Bright and finely cut, this steely, delineated Champagne has a ton to offer. Larmandier Bernier Terre de Vertus 1er Cru 2017The 2017 Brut Nature Blanc de Blancs Terre de Vertus 1er Cru is creamy, open-knit and quite seductive. Readers will find a generous, sensual Champagne with plenty of early appeal. Vinification and aging in oak softens the contours. The 2017 Brut Nature Blanc de Blancs Terre de Vertus, which derives from two east-facing plots within the same lieu-dit in Les Barillers, located mid-slope, imparts a very mineral, almost crystalline character. A vineyard that rarely produces powerful wines, even in the context of 2017, it has retained its personality, though it’s a little more generous and slightly less focused than the 2016 rendition. Unfurling from the glass with aromas of lemon peel, honeysuckle and oyster shell, it is medium-bodied, racy and saline-tinged and can be approached before the last year’s release. Terre de Vertus is one of three single-terroir Blanc de Blancs produced at this estate and is certainly the most famous. The 2015 Brut Nature Les Blanchiens is a 50/50 blend of Pinot Noir and Chardonnay picked in the eponymous mid-slope parcel in Mareuil-sur-Aÿ. It was aged for 12 months in oak before tirage, then aged for five years in bottle. A deep golden color moves on to a nose that opens with an initial tone of white lilies, followed by melted butter suffused with white pepper. Creamy mousse on the palate accentuates the essential saltiness and highlights the rye crumb and fresh brioche autolysis. This is rich and generous, from ripe and expressive grapes, from oak vinification but also from 2015. The salty verve in the background, however, provides ample balance and freshness. Bereche & Fils Cramant Grand Cru 2017The 2017 Extra-Brut Cramant Grand Cru is a rich, textured wine. Lemon confit, marzipan, spice and a whole range of tropical accents are dialed up in this exuberant, open-knit Champagne. This is an especially flamboyant style, but it works nicely. The mousse is especially fine, giving the Cramant a decidedly vinous feel. Gosset Celebris Extra Brut 2008The 2008 Extra-Brut Celebris offers up hints of apricot, brioche, baked apple tart, white pepper, chamomile and dried flowers. Larmandier Bernier Les Chemins d'Avize Grand Cru Extra Brut 2015The 2015 Extra Brut Les Chemins d'Avize Blanc de Blancs Grand Cru is a broad, ample Champagne that reflects both vinification in wood and time on the lees. Lemon confit, marzipan, dried flowers, chamomile, sage and spice build in the glass. Powerful and resonant, with no hard edges, the 2015 is terrific. The 2015 Extra-Brut Blanc de Blancs Grand Cru Les Chemins d'Avize opens in the glass with aromas of citrus oil, verbena, fresh pasty, vanilla pod and fresh herbs. Medium to full-bodied, pillowy and chalky, with a vinous, rather concentrated profile and bright acids, it's a little compact out of the gates but appears to be built to age with grace. Larmandier Bernier Vignes de Levant Grand Cru 2013The Larmandier family excelled in this cooler vintage, so it's unsurprising that the 2013 Extra-Brut Blanc de Blancs Grand Cru Vieille Vigne du Levant has turned out beautifully. Wafting from the glass with notes of crisp yellow orchard fruit, brioche, white flowers, oyster shell and honeycomb, it's medium to full-bodied, deep, layered and incisive, with a tangy spine of acidity, terrific tension and a long, racy finish. The 2013 Extra Brut Vieille Vigne de Levant Grand Cru is a Champagne of real breadth and substance that captures the essence of these 50-70-year-old vines. Krug Grand Cuvee -172 NVThe 172ème édition, based around the 2016 vintage, is a delicate, floral and saline Grande Cuvée at this early stage in its life. The palate it taut, tightly wound, gradually unfurling into toasted fruit bread, rye bread and roasted nuts, wrapped around an intricate and taut lemon core. It's exceptionally long, spicy, rounded and spherical in shape. Notes of sweet unsalted butter round out the finish, which has such length, elegance and balance. 58% of the wine is from the 2016 vintage, which saw a lot of rain in the spring and close to flowering, with 42% from reserve wines. Louis Roederer Cristal 2015If the 2014 vintage was especially open and demonstrative, the 2015 Cristal is going to require more patience. Unwinding in the glass with aromas of citrus oil, crisp stone fruits, white flowers, crushed mint and subtle hints of buttery pastry, it's medium to full-bodied, deep and layered, with a deep, concentrated and rather introverted core of fruit framed by chalky extract and animated by a pretty pinpoint mousse. A strong effort in a less-acclaimed vintage, Pol Roger's newly released 2015 Cuvée Sir Winston Churchill opens in the glass with aromas of confit citrus, ripe orchard fruits and dried white flowers mingled with hints of honeycomb, freshly baked bread and anise. Medium to full-bodied, vinous and concentrated, with bright acids, chalky structuring extract and a pinpoint mousse, this inherently rather rich, gastronomic Champagne is quite tightly wound out of the gates and will reward a bit of bottle age.
