Made from 100% Malbec including fruit grown by local producers that Pascal consults to. About 70% is lighter and finer material from the limestone plateau (the causses) and 30% richer and denser fruit from the iron-rich gravelly terraces of the Lot River valley. The vines average 25-30 years and about 85% of the fruit is currently certified organic, with one grower at year 2 in conversion.
Fermented for a total of 20 days, with regular punch-downs for the first 3 or 4 days only. The 2021 The Farm Single Vineyard Cabernet Malbec is a singularly impressive wine: it is juicy and vibrant, but it is also layered with spice, rose petals, leaf/bramble and black tea nuance. The wine is detailed, incredibly so for the price (approximately $35AUD), and is possessed of the Clare Valley regional leafiness that so defines the Cabernets (and, to a certain extent, the Malbecs) from here. The property was planted with 40-year-old Malbec (locally known as 'Cot') and they have now moved towards Certified organic and work with some biodynamic principles. Everything is by hand here and the wines are uncommonly elegant and round compared to the more rustic versions we are used to seeing.
No oak in this cuvee and it is so much better for it. That typical mulberry and boysenberry fruit leap out of the glass with a touch of licorice interspersed between wild bracken aroma. Approachable and fruity, with a soft, supple texture and dressed with a fine layer of smooth rich tannin. Vibrant and full of energy but still solidly built without feeling cumbersome or heavy. They really pull this off beautifully.

Terroir Sense Fronteres Brisat 2022Brisat is a blend of 75% Garnacha Blanca and 25% Macabeu from 15- to 35-year-old vines around Capçanes, grown at between 300 and 350 metres on sandy clay soils locally known as panal. The fruit is harvested earlier than typical for the area—when flavours are ripe and acidity is still vibrant.
Brisat in Catalan refers to wine fermented on skins. Half the grapes were direct-pressed, and the other half macerated in their juice for five to seven days. If you tasted earlier releases of Brisat, we should note that these days Huber and Peceric are searching for more finesse and expression of place in this wine, and thus have toned back the ‘skinsyness’. The must fermented with indigenous yeasts before the wine rested on lees for six months in tank. It was bottled unfiltered.

Raventos i Blanc 'Blanc de Blancs' Espumoso 2021Raventós i Blanc is a small, family-owned concern, based on 90 hectares at Sant Sadurní d’Anoia, which has been in the family since 1659, and has been a wine-growing estate since 1497. Their 'Blanc de Blancs' is a blend of Xarel.lo, Macabeu and Parellada, the varieties are fermented separately then blended before second fermentation. Minimum lees aging is 18 months and dosage is kept to a minimum, keeping it extra brut in style.
Typical of the Raventos i Blanc house style, this is a supremely elegant and delicately textured premium sparkler, featuring fresh apple and fine sand earthiness. Nestled into the characteristic fine bead are twinkles of seaspray, white nectarine and green pear; it’s deft, delicious and has lovely flavor and mouthfeel as well as crunch and race. The juice was fermented in oak (15%) and stainless steel (85%) at controlled temperature. The wine then spent 4 months in stainless steel, and it was aged on lees for 2.5 years.
