Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Voyager Estate Chenin Blanc 2024Fruit for the Chenin Blanc comes from three organically farmed estate blocks on the Voyager Estate property. Voyager has some of the oldest Chenin Blanc in the Margaret River region, with some of the vines planted as far back as 1978. The vineyard soils are mostly gravelly loams with stony clay subsoils, providing excellent drainage and good moisture-holding capacity. The resulting fruit has exceptional balance.
One of the better chenin blancs from Voyager Estate to date as it has flavour and richness but stays neatly in the dry spectrum. Poached pears and quince, lemon balm and lime curd with an intriguing waft of lanolin and the tug of phenolics add to the palate's shape. There's refreshment throughout but also depth. Lovely. Petit Pittacum Mencia 2022We have been enamoured with the mencia based wines of Spaces northwest since first we tried them. Their beautiful lifted nose spiked with mineral accents that flowed onto graceful pallets raked with fine granit like tannins an earthy savouryness at the edges. They are something akin to cru Beaujolias crossed with the finest reds of the loire and we just cant get enough.
Bodegas Pittacum is owned by the Terras Gauda operation and is situated in Argaza in the heart of Bierzo and made from grape sourced from small plots of organically grown 90 year old vines grown in clay soils on steep slopes.
Glace fruits with crème de mure and raspberry coulis flecked with granitic mineral shards. Mid weight styling come from slippery red fruits and a gentle burst of freshness that comes not from acidity but from a deep mineral vein soaked up from the long roots and rocky slopes. Its like a bowl of mixed berry smashed onto rock and is absolutely delightful. If you have not had the wines of the region or mencia this is a belter of an introduction.

MMAD Chenin Blanc 2023 375mlI cut my teeth on chenin blanc, McLaren Vale chenin at that, but the wines I was drinking in the late 1980s didn’t bear a great deal of resemblance to this majestic offering.
I’m a bit blown away. Instead of being the steak knives in the range this vies for top spot. It has flavour and texture but it’s the way brine and smoky, reductive characters play in with the fruit that really gets you in. This is a sophisticated white wine. It’s all river stones and nashi pear, apple and cedar, though it’s defined by its smoke/salt/stone characters. Ah Tuffo! This wine seems to never fail us. Not only is it a wonderful example of classic Vouvray it always delivers that little x-factor and bit of pizzaz we like. That lovely clay/waxed citrus and quince fruit comes at you straight off-the-bat with that slaty chalky thin that chenin does in the Loire so well. Some apple and pear drop generosity on the palate is cut by crunchy acidity and a little hit of phenolic grip that stick all those beautiful flavours to your mouth. Cesar Marquez Parajes del Bierzo 2022César Márquez Parajes is a coupage of the most prestigious and unique Bierzo plots. Old vines grown as they used to be, without using pesticides or chemicals that can damage the natural balance of the terroir. Each of the plots is worked separately according to their needs and the harvest is carried out manually.
In the winery, 50% of the grapes used to make César Márquez Parajes are destemmed. Then they are pressed in the old-fashioned way, with feet, so that some of them stay whole during fermentation. Fermentation is spontaneous with the grape’s native yeasts. Once the must becomes wine, it is pressed and placed into 225 and 500 litre barrels separately. After 12 months the barrels are emptied and the different wines are combined.

Damien Pinon Vouvray Brut NVThird generation vignerons, the Pinons have 25 hectares in Vernou-sur-Brenne. 50% of their production is sparkling and 50% still wine with nothing sold off to the négoce.
We have long loved the wines of Damien Pinon and when we first tried this little number we were pretty stoked. Great sparkling Loire is such a treat. It captures all that zingy, racy, pure goodness of chenin blanc while bringing the added dimension of bubbles into the equation. They seem like a perfect partnership and we absolutely love this wine.
Quince and granny smith, talcum powder, quartyz spice and a gently honeysuckle, floral element that floats deliciously around in the background. Its pure and precise but fills out across the palate with each sip. Sometimes, Loire Sparkling is a little too lean but this deliver plenty of fruit at the same time to balance of the fine, minerally acidity.

Rochers des Violettes Touche Mitaine 2021The Touche Mitaine parcel features Chenin Blanc vines aged 35 years, planted on clay and flint soils. It was vinified in used oak barrels of 228 litres, with an élevage lasting twelve months. Aromatically this is rich in powdered chalk, with layers of white peach and a fragrant, lifted, minty freshness. The palate matches this style, in a gently composed structure, polished and fresh, with the same minty, white peach substance. It is framed by firm acidity, which I find typifies the vintage.
