Callie has grown up with wine in the blood. It was family holidays to Chianti in Italy, and tasting’s at Louis Roederer in France that sparked a serious passion in Callie from a very young age. Having studied psychology and criminology at Melbourne University, and qualifying as a chef it was the lure of wine and more so vineyards that she just couldn’t resist. She’s now studying wine making at Charles Sturt University, and has already worked at some A-list wineries, including De Bortoli in the Yarra Valley, Littorai Wines in California and Fattoria Zerbina in Romagna.

This is a smashing combo of classic Alsace and northern Italian style grigio. Bursting with Apple, pear, some honeysuckle spice, and a hint minerally goodness too that you don't often find at this level. It's the lighter side of mid-wright packed with crispy fruit and plenty of it the focus to a fine, citrus-driven fresh with lots of crunch and energy. The quintessential drink don't think wine.

The Domaine itself is plonked on the hills overlooking Eauze the capital of Armagnac. Its certified organic and has eighty acres of vines that grow on the gentle hills of sand and fine silt soils. All harvests are done by hand and the domaine does not use any chemical fertilizers or pesticides. This is a dry and textural blend of Colombard, Ugni-Blanc, Sauvignon, and Gros-Manseng.

They have done it again! This is my go to white for summer with a lovely lemony, floral lilt and powdery, perfumed nose. Gentle and bright with clean and crisp flavours of orchard fruits and white nectarine. Its uncomplicated and delicious with clean, crunchy fruits and a zippy, minerally finish. Ridiculous value. STAGE 3  - FLAT MON - PLAISANCE > TURIN 230.8 KM

Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.

The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener.  Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.

Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. So if that's your bag check out the recipe below. WE've made sure to include Lillet here too so it's the perfect Tour combo of French & Italian!

30ml gin - Haymans is our choice
30ml Turin Vermouth Drapo Vermouth Bianco 16% alc
20ml Lillet Blanc
15ml grapefruit juice, freshly squeezed
1 grapefruit peel, for garnish

Combine and stir gently but patiently in a rock glass then garnish with citrus peel

A very fresh dry white with yellow apple, lemon, fresh garden herb and snowpea aromas. Crisp and structured with a nice interplay of lively acidity and creaminess. Long, delicately spicy and herbal finish that’s very clean. A cuvee of 32% gewurztraminer, 25% pinot gris, 15% riesling, 15% pinot blanc, 10% sylvaner and 3% muscat. Drink or hold. Enlists all of grigio's strongest varietal trademarks from the gentle blush colour and scents of pear, honeysuckle and apple to the savoury nod on the palate, crisp acid flow and touch of salty almond to close. Made by sommelier-come-Italian wine rep-come Italian wine tragic, James Scaresbrook, his renditions of Italian varietals are some of the most convincing you will find. That's not to say I like them because they're mimicking the Italians. Nup, not at all, and in fact the fruit spectrum generally shows it's antipodean origin. Through intelligent winemaking techniques (often observed in his own travel in Italy) he brings texture and aromatic complexity to these varieties. It's a recognition of how these varieties work with food and transports them from dry white and red wines to something with altogether more interest.

A recent appointment trying through his range only highlighted what good things James is doing. His wines are all on point with thougtful winemaking inspired their homes in Italy but not dogmatically so. James is happy to changed tact here or there if he sees something not working or vice versa if a wine is expressing itself in a way he likes but moves away from his original idea hes is not afraid to let it do its thing.

Argyros Atlantis White 2022 is a refreshing and elegant white wine from the island of Santorini, Greece, produced by the renowned Argyros Winery. This wine is crafted primarily from native grape varieties, including Assyrtiko, which is famous for its vibrant acidity and minerality, along with smaller amounts of Athiri and Aidani. These grapes thrive in the volcanic soils of Santorini, imparting a distinctive character to the wine.

The 2022 vintage of Atlantis White is aromatic, with fresh citrus notes, green apple, and a touch of floral character. On the palate, it offers a crisp, clean profile with a zesty minerality and a slightly saline finish, reflecting the island's coastal terroir. It’s a versatile and delightful wine.

Quite possibly the most delicious Pobblebonk to date. Riesling, friulano, pinot grigio and ribolla gialla are the friends, each fermented wild in used French oak, on full solids and later blended. It’s heady with meadow flowers, lemon blossom and hints of lemon verbena, really spicy with nutty, leesy aromas, and the palate is both textural and alive with fine acidity. Light to mid straw colour in the glass, the bouquet savoury with some nutty notes possibly from barrel ferment, adding layers to the floral and spicy fruit aromas. Deliciously intense fruit on palate with a touch more dimension than the Quealy pinot grigios. It's truly more than the sum of its parts. How do you make a melange of fruity, bitter and salty so perfectly? So easygoing, delivering the goods, not stingy on flavour, not pushy with perfume. Just right. Pooley Wines has an historical property and two separate vineyards at each end of the Coal River Valley in southern Tasmania. The Coal River Valley has developed a worldwide reputation, and is ideally suited, for the production of cool-climate wines such as Pinot Noir, Riesling and Chardonnay. Members of the Pooley family have been actively involved in the business for three generations. Their longstanding passion and commitment to fine wine are your assurance of un-compromising quality.

Comes mostly from the family vineyards in Richmond and Campania, Coal River Valley. The fruit was chilled to 5 degrees then whole-bunch pressed to tank. Cold settled and racked to tank for ferment. 3 months on fine lees with a total ferment time of 14 days. Alcohol: 13.3 PH: 3.1 TA:  9.0 T/Ha Bottle Date: 2th August 2023. Residual Sugar: 0 g/L.

‘A vibrant aroma of citrus blossom, candy apple and yuzu on the nose. Bright characters of white peach and apricot follow on the palate with subtle notes of green apple and beeswax. Strong acid and persistent length finish this lovely wine.’ Anna Pooley, Winemaker.
