Domaine Pajot Cotes de Gascogne Blanc 2022The Domaine itself is plonked on the hills overlooking Eauze the capital of Armagnac. Its certified organic and has eighty acres of vines that grow on the gentle hills of sand and fine silt soils. All harvests are done by hand and the domaine does not use any chemical fertilizers or pesticides. This is a dry and textural blend of Colombard, Ugni-Blanc, Sauvignon, and Gros-Manseng.
We were super impressed with the latest vintage here. Much more texture and weight then in previous vintage with an emphasis on phenolic grip and slippery fruit. There is lovely chalky, white pepper note on the nose with fresh nashi pear and green apple to the fore. They have done it again! This is my go to white for summer with a lovely lemony, floral lilt and powdery, perfumed nose. Gentle and bright with clean and crisp flavours of orchard fruits and white nectarine. Its uncomplicated and delicious with clean, crunchy fruits and a zippy, minerally finish. Ridiculous value. Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? La Dama Vini Valpolicella Classico 2023I do like Valpolicella, especially when it’s red fruited, balanced, and easy to drink, which is what this wine delivers. Strawberry, white pepper, a dusty frame of tannin, a sweetness to poached strawberry and raspberry, a little blood orange, with a peppery finish of good length. Puts me in mind of Pelaverga in a way, and there’s that low key energy to the wine that makes it so appealing. A little bit of ripe tomato tang, new leather, and lots of red fruited and spicy interest. Established by Gabriele and Miriam Dalcanele in 2006, La Dama represents the new breed of winemakers in the region. Modern, fresh yet compelling wines coaxed from organically farmed vineyards in the fabled commune of Negrar, home to some of the great names including the legendary Giuseppe Quintarelli.Their 10 hectare estate has been certified organic since 2015 and works only with the native varieties of Corvina, Corvinone, Rondinella, and Molinara. Oak influence is kept to a minimum in order to ensure the vineyard speaks for itself in the glass.
Opens with wild forest fruits, a touch of red currant flecked throughout and dusted with sweet, peppery spice. Silky fruit, super vibrant and punchy packed with flavour but delivered in La Dama's typical ethereal style. A little dark cherry, a splash of blackberry, and a touch of wild strawberry fruit too. Finishes long and fresh. Another great drop.

Lucchine is the name of the vineyard that provides the grapes. It is located in the plains at the foot of Pedemonte hills in the heart of the historic Valpolicella Classico area. The Tedeschi Family has been linked to winemaking since 1630. However, it was the purchase of several vineyards in 1824 by Nicolo Tedeschi which laid the foundation for the family's current winemaking business. These are classicaly styled but modern takes with a consistency that few producers can boast.
