Callie has grown up with wine in the blood. It was family holidays to Chianti in Italy, and tasting’s at Louis Roederer in France that sparked a serious passion in Callie from a very young age. Having studied psychology and criminology at Melbourne University, and qualifying as a chef it was the lure of wine and more so vineyards that she just couldn’t resist. She’s now studying wine making at Charles Sturt University, and has already worked at some A-list wineries, including De Bortoli in the Yarra Valley, Littorai Wines in California and Fattoria Zerbina in Romagna.

This is a smashing combo of classic Alsace and northern Italian style grigio. Bursting with Apple, pear, some honeysuckle spice, and a hint minerally goodness too that you don't often find at this level. It's the lighter side of mid-wright packed with crispy fruit and plenty of it the focus to a fine, citrus-driven fresh with lots of crunch and energy. The quintessential drink don't think wine.

Enlists all of grigio's strongest varietal trademarks from the gentle blush colour and scents of pear, honeysuckle and apple to the savoury nod on the palate, crisp acid flow and touch of salty almond to close. Made by sommelier-come-Italian wine rep-come Italian wine tragic, James Scaresbrook, his renditions of Italian varietals are some of the most convincing you will find. That's not to say I like them because they're mimicking the Italians. Nup, not at all, and in fact the fruit spectrum generally shows it's antipodean origin. Through intelligent winemaking techniques (often observed in his own travel in Italy) he brings texture and aromatic complexity to these varieties. It's a recognition of how these varieties work with food and transports them from dry white and red wines to something with altogether more interest.

A recent appointment trying through his range only highlighted what good things James is doing. His wines are all on point with thougtful winemaking inspired their homes in Italy but not dogmatically so. James is happy to changed tact here or there if he sees something not working or vice versa if a wine is expressing itself in a way he likes but moves away from his original idea hes is not afraid to let it do its thing.

Quite possibly the most delicious Pobblebonk to date. Riesling, friulano, pinot grigio and ribolla gialla are the friends, each fermented wild in used French oak, on full solids and later blended. It’s heady with meadow flowers, lemon blossom and hints of lemon verbena, really spicy with nutty, leesy aromas, and the palate is both textural and alive with fine acidity. Light to mid straw colour in the glass, the bouquet savoury with some nutty notes possibly from barrel ferment, adding layers to the floral and spicy fruit aromas. Deliciously intense fruit on palate with a touch more dimension than the Quealy pinot grigios. It's truly more than the sum of its parts. Pooley Wines has an historical property and two separate vineyards at each end of the Coal River Valley in southern Tasmania. The Coal River Valley has developed a worldwide reputation, and is ideally suited, for the production of cool-climate wines such as Pinot Noir, Riesling and Chardonnay. Members of the Pooley family have been actively involved in the business for three generations. Their longstanding passion and commitment to fine wine are your assurance of un-compromising quality.

Comes mostly from the family vineyards in Richmond and Campania, Coal River Valley. The fruit was chilled to 5 degrees then whole-bunch pressed to tank. Cold settled and racked to tank for ferment. 3 months on fine lees with a total ferment time of 14 days. Alcohol: 13.3 PH: 3.1 TA:  9.0 T/Ha Bottle Date: 2th August 2023. Residual Sugar: 0 g/L.

The 2022 Passorosso is spicy in the glass with an herbal thrust up front, giving way to ginger-tinged dried cherries and dusty sage. This is silky-smooth with ripe red and hints of blue fruit. Brisk acidity motivates the mouthfeel as the 2022 takes on a salty savoriness toward the close. It finishes with outstanding length and concentration, leaving a coating of fine tannins and a resonance of licorice on the close. Beguiling nose of red fruit and pistachios, with flowers and black pepper enhancing the aromas. The attack is a bit raw, with edgy tannins and crisp acidity. It's medium- to full-bodied and chewy, with a balanced finish. It needs time to soften the structure, but displays a tight, crunchy youthful style that will match well with food and has the potential for aging. This high-altitude vineyard delivers greatness. Aged in 200L American Oak ex-Bourbon casks for a minimum of five years, the whisky then sees secondary maturation in French Oak barriques that had Tasmanian Pinot Noir aged in them. This secondary maturation in French Oak ex-Tasmanian Pinot Noir casks adds beautiful red berry notes and a unique Tasmanian influence to this small batch single malt.

With rich and full boasting vibrant notes of raisin toast, stewed fruits and candied orange with a hint of clove, our signature Double Cask is approachable in style and a whisky you’ll keep coming back for.
