Eric Bordelet Sydre Brut Tendre Apple Cider NVThe biodynamic orchards are comprised of trees upto 50+ years old containing 40-50 varieties of heirloom apples. The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Willie Smiths Heritage Blend Cider 750mlSituated on 115 acres, Wille Smiths is 30 minutes south of Hobart in the Huon Valley, a once thriving apple-growing region that exported apples all over the globe and earned Tasmania the title of the 'Apple Isle'.
Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name. It’s pushing into full-bodied, but gee, there’s a rich swell of dark fruit here, and it’s also kind of ferrous/earthy, but fresh and vibrant with it, some dried raspberry, firm and grainy tactile tannin grip, sporting excellent length, and there’s maybe a bit of iodine to close. Y.amirault Amirault Bourgueil Cote 50 2022The old La Coudraye, which changed to La Côte back in the 2018 vintage to reflect the variety of origins for the fruit. This is a sample drawn before bottling. A vibrant hue in the glass, and a beautifully pure and eager nose of black cherry, blackcurrant and damson fruits. The palate remains true to the nose, with that same sense of purity and an underbelly of soft chalk, before a sappy cherry-skin character at the end. Modestly extracted tannins, firm but not over done, with nice acidity for this warmer vintage, this should evolve nicely for some years, but should be ready to go within a year or two. Medium-bodied, tannin sits so nicely within the wine, fresh and long, with classic fragrance in with that. So ‘minerally’ and cool. Very long. Trinity Hill The Gimblett Bordeaux Blend 2019Aromas of dark berries and hay, tobacco and gravelly soils, there’s a core of concentration and power with new oak and violets, red berries and energy. Complex, youthful and engaging. On the palate - though very primary still there’s a silky textured core of fruit contrasted by polished tannins and salivating acidity. The sweetness of new barrel adds depth and complexity. As the wine relaxes in glass the flavours and textures become more intense and focused coating the palate with flavour and concentration. Trinity Hill's 2018 The Gimblett is a 50-50 blend of Cabernet Franc and Cabernet Sauvignon, aged in 100% new French oak for 21 months. The floral overtones of the Franc really show up on the nose, while the palate is more about cassis and a streamlined, concentrated, linear presentation. Medium to full-bodied, it adds softly dusty tannins on the finish, along with hints of mocha and vanilla. Approachable now, it should still be going strong in a decade's time. Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. Bordelet worked as sommelier in the leading 3 star Parisian restaurant, ‘Arpege’ where he became deeply familiar with the top winemakers and wineries of France. In 1992 he took over the tiny patch of family farmed orchards in Charchigné, in the heart of Normandy’s premium Cider producing area. Since then he has set about rescuing the ancient ‘heirloom’ varieties of pears and apples that produce tiny quantities and amazing flavour.
Produced from pear trees estimated to be about 300 years old. Poiré Granit has 25-80 grams of sugar per liter, yet it doesn't taste particularly sweet. This is due to the tannin and acidity, which Bordelet says is twice as high as the apple! Stunning as aperitif or with cheese or desserts. With just 4% alc/vol this can be enjoyed any time. Mount Horrocks Cabernet Sauvignon 2022From biodynamically (certified) grown vines. This switches things up for the general character of Clare Valley cabernet wines, lighter, brighter, frisky almost, lots of greenery and peppery spice, almost minty elements in dark chocolate, cassis, boysenberry characters to taste. There's a crispness to the wine, bright and lively, the herbaceous notes leading the way but not totally defining the wine. Fine, light tannins hold court. The perfume matches the flavours, a big fog of freshness, herbal detail and almost a sense of 'purple' if synesthesia is your thing. All up, a wine of vigour and good energy, though you'll be wanting cabernet on the more vibrant side overall. The 2018 Prieuré-Lichine is gorgeous. Bright and racy in the glass, the 2018 impresses with its magnificent purity of fruit. In 2018, Prieuré-Lichine has terrific energy and cut. It is perhaps a bit less creamy than the 2016, but also impeccable in its balance. Part of that is driven by the higher percentage of Cabernet Sauvignon in the blend in 2018. The 2018 Château Prieuré-Lichine is an attractive, elegant Margaux offering classic, pretty red and black fruits, cedary spice, and dried flowers aromas and flavors. Medium to full-bodied, elegant, and again, with an incredible floral character, it has a supple, rounded texture that's going to allow it to drink nicely in its youth, yet it should also evolve for 15+ years or more. Forest Hill Block 5 Cabernet Sauvignon 2022It feels like this pocket of Mount Barker does well with this variety. Very well. Bold scents of cassis, lavender, bay leaf and sea spray with well-judged clove and cinnamon spice. Refreshing and succulent to taste, spot-on medium weight, though the levity and vitality make it feel prettier than that. Dark fruit flavours but lots of herb and spice too, tannins in tow are ultrafine and, again, mineral-charged, all pulverised stone and talc. This has great mojo and feels as fancy as it is highly drinkable. What excitement! 95 MIKE BENNIE, wine companion
