    A highly risky and complex process, the making of this wine is very much about seat-of-pants decision making and this is where the experience of 30 vintages certainly helps!” says Stephanie.

    The high-risk part comes after the canes that feed the fruit are cut – causing that fruit to concentrate – effectively using the vine as a drying rack for the fruit. Much depends on the weather conditions that follow – sunny and dry conditions work wonders; wet, cold or windy conditions all bring challenges. Stephanie uses intuition to decide the day to harvest.

    This is a unique, delicious, concentrated wine that delivers all the hallmarks of riesling – citrus, florals and spice; beautifully expressed through an intense yet perfectly balanced palate and a pristine, clean finish.

    An even split of upper and lower Yarra fruit. Whole-bunch pressed and wild fermented in 15% new French puncheons. Around 25% mlf. A very bright green gold. Attractive scents of ripe white pears and nectarines, lemon curd and just the right amount of flint. Packs a punch on the saline, gently textured, gently chewy palate.     Honeycrisp apple skin, lemon zest and green plum. Winter melon and starfruit. Plumes of talc powder, pomice and honeysuckle. Plenty of white delicate florals and a blush of nectarine. Intoxicating acidity and a kefir creaminess on the finish. A spray of saline and oak appears in its round shapes rather than toasty notes. Alive with energy and creeping unsuspecting power.     A step up in quality and intensity, but also a bity more tightly wound than the Village wine. Also, more awash with minerality, bordering on estuarine (a character I love with these wines), and that really brings the Chabliness to the fore. Along with a crisp, but ripe, array of fruit a little grip and a crunch of acidity, this is pretty textbook Fourchaume from Chantemerle and I think will expand well with a few years in the cellar, but that ample fruit and weight provides a tonne of upfront pleasure in the early days.

    Named for Hamish David Walsh, and as it happens, my brother is David Arthur Walsh. A blend of Burnside Chardonnay (raised in anfora) and Osmington (three year old oak).

    Well, this is a wild one for sure. It’s kind of sweaty and clove spiced, oyster shell, white mushroom, lime and cape gooseberry. It’s saline and savoury, powdery and dusty in texture, some cashew cream in the mix, with a curry leaf finish of good length. It’s kind of dirty, and yet, I find it strangely compelling.     100 % Coal River Riesling coming from the Winen Vineyard on White Kangaroo Rd (near the home vineyard for B+P) and from the limestone-based Pressing Matters Vineyard in Richmond, Coal River Valley. The fruit was hand picked and whole bunch pressed to tank, with the fermentation arrested at the optimum acid/sugar balance. The wine was racked to one 2000 L egg shaped concrete vessel for 5 months maturation on fine lees. Bottled un-fined, vegan friendly.

    Makes you smile this wine. There's a generosity of aromatic that leads you through baked pastry, fresh cut stonefruits and then an invogorating punch of crushed stone minerality puffs into view. It's kind of like a Champagne letting it's hair down on the palate as well, genrosity of well-defined fruit is edged with minerality and oyster shell while the fine bead cinches and tucks in the effusive edges. Its got enough in it for the serious-minded fizz drinker but is also playful and generous enough to keep you pulling it out of the fridge for pretth much any pcassion. MICHAEL MCNAMARA

    This thing hits it out of the park in terms of delivering quality and value. It doesn’t hold back with packing in the flavour either. The fruit is present and accounted for, with a nice lick of minerality and some back end punch, but what is really striking is the yeasty, brioche, burnt toast mealy characters that immediately greet you as you take your first sniff. It has all the bells and whistles. As a Champagne nerd I love to see that in the wine, as distinctly different to my fetish for Grower Bubbles, give me some of that expressively yeasty goodness. Substantial length here too. This will be one hell of a crowd pleaser. ROSCOE

In the crucial early days of vinification, Rosalind foot stomps the ferments three times a day to ensure each berry is quickly but gently popped, maximising the juice’s exposure to skins and stalks. It’s worth decanting so that all the aromas and flavours are revealed: stone fruit, dabs of Meyer lemon and preserved lemon, too. The palate is invigorating, with ginger spice, galangal, and there’s a tanginess offset by a light layer of butter/cream, but oh-so light. It’s complex, energising and different.     Matured in clay amphora from gooder bits of good vineyard in Margaret River.

    This has some mojo. Succulent texture with a rub of granitic chew, elements of terracotta and briny savouriness amongst peach, nectarine and cumquat sweet-sour tang. Exotic in a way, but pleasingly so, very even and well balanced in flavours, evocatively perfumed and generally, wildly drinkable. Lots of charm and x-factor here. Keen. It has the perfect amount of complexity – think brioche with lemon curd with a touch of aldehydes – to the brightness of apple and stone fruit within.
