Domaine Pajot Cotes de Gascogne Blanc 2022The Domaine itself is plonked on the hills overlooking Eauze the capital of Armagnac. Its certified organic and has eighty acres of vines that grow on the gentle hills of sand and fine silt soils. All harvests are done by hand and the domaine does not use any chemical fertilizers or pesticides. This is a dry and textural blend of Colombard, Ugni-Blanc, Sauvignon, and Gros-Manseng.
We were super impressed with the latest vintage here. Much more texture and weight then in previous vintage with an emphasis on phenolic grip and slippery fruit. There is lovely chalky, white pepper note on the nose with fresh nashi pear and green apple to the fore. Chateau du Rouet Cuvee Reserve Rose 2021 375mlNever judge a book buy it's cover right? Mostly, you see the colour of this and you at least know you are on good footing to begin with. It's pale, like a blush of peach. Properly dry with a splash of sweet citrus, mandarin, ripe red grapefruit, a just tart orange aspect and then some lovely peach notes. All this is underpinned by a bright, clear, palate cleansing freshness and a nice pithy texture that licks at the sides of your mouth. It's long and energising, it both slackens the thirst with its buoyant, uplifting feel and engages the old taste buds and sets the salivary glands quivering. Who doesn't love Rose like this? Fontareche Corbieres Rouge Vieilles Vignes 2022The Fontarèche property, at the heart of Corbiere in Languedoc-Roussillon, has a long, illustrious and noble history dating back to 1201. Current proprietor, Jacques de Lamy took over from his father, Count Edouard de Lamy in 1957 where the de Lamy family has been in charge of the property since 1682. The estate works with 17 grape varieties, but Carignan is their jewel in the crown. The vines are planted to the semi-desert Mediterranean climate trapped between the Atlantic and Mediterranean. The Atlantic breezes funnel through the mountain ranges that form the backdrop of the region and help to temper the summer heat in the vineyards retaining freshness and vibrancy in the wines.
Wonderfully lifted notes of violets, mulberry and blue fruits all underlined with gentle minerality. The palate is brimming with a core of dark fruits that come together nicely with a focused and energetic finish. It really is surprising the level of subtle complexity at this price point that remains so easy to drink at the same time

They have done it again! This is my go to white for summer with a lovely lemony, floral lilt and powdery, perfumed nose. Gentle and bright with clean and crisp flavours of orchard fruits and white nectarine. Its uncomplicated and delicious with clean, crunchy fruits and a zippy, minerally finish. Ridiculous value. Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter.
