Eric Bordelet Sydre Brut Tendre Apple Cider NVThe biodynamic orchards are comprised of trees upto 50+ years old containing 40-50 varieties of heirloom apples. The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. Suertes del Marques 7 Fuentes Tinto 2020Village wine. Suertes del Marqués village red is a blend of Listán Negro and Tintilia. The style of García’s entry-level red has evolved considerably since the early days. Today it’s a prettier, lighter-bodied and more thirst-quenching wine. The main component remains the wildly aromatic Listán Negro with a small portion of Tintilia, entirely fermented in small tanks with indigenous yeast and a short, gentle maceration.
The name refers to the seven climats in the D.O. of Valle de la Orotava. Today Suertes draws the raw materials from 35 separate plots, from vines ranging from 10 to 100 years old, at a range of altitudes (up to 800 metres) on the slopes of Mount Teide. The Listán Negro is grown mainly in cordón trenzado, while the Tintilia (from the Bocanegra plot) is trellised to the espaldera system. Each parcel begins vinification separately in stainless steel before blending and aging in small concrete tanks (70%) and mature French demi-muids (30%).

Domaine Plageoles Gaillac Contre Pied 2019Red. Organic. To be contre-pied is to be diametrically opposed to something. In this case, this carbonic Duras is the opposite of the rustic, sleepy wines associated with this variety (and plenty of Gaillac rouge in general). This wine originates from a block of clay/limestone soil in Cahuzac-sur-Vère. The winemaking takes in a short carbonic maceration followed by six months aging in concrete tank.
Florent Plageoles told us that he felt that Duras grapes would take to the Beaujolais treatment, et voila, Contre Pied has now become a mainstay of the Plageoles roster. Expect crunchy acidity and thirst-quenching satisfaction—sappy red fruits, invigorating and tensile acid and soft grainy tannins surround a plump, cherry-like weight. Hints of dark chocolate and spice round out the steely skeleton. In short, a super delicious and unique carbo-styled red.

Suertes del Marques La Floridita Tinto 2021Previously this wine was only available to the Canary Island distributor however after some convincing Jonatan has released some of this light red for us to play with. It is pure Listán Negro from old vines in the Paraje Las Suertes. It fermented destemmed in concrete vats and was pressed after four days to finish fermenting without skins in 500 litre used oak barrels, where the wine was kept for three months.
Beautifully ruby hued showing a spicy cinnamon and dried herb edge with tangy red raspberry, cherry and summer plum fruits with super light tannins, a stony element and subtle floral notes. Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. Bordelet worked as sommelier in the leading 3 star Parisian restaurant, ‘Arpege’ where he became deeply familiar with the top winemakers and wineries of France. In 1992 he took over the tiny patch of family farmed orchards in Charchigné, in the heart of Normandy’s premium Cider producing area. Produced from pear trees estimated to be about 300 years old. Poiré Granit has 25-80 grams of sugar per liter, yet it doesn't taste particularly sweet. Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720ml
Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end.
Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

4 Kilos Motor Callet 2021The most impressive 2021 Motor Callet was produced with 70% Callet and 30% Fogoneu at only 12% alcohol and with mellow acidity and lovely fragility. This comes from younger vines (15 years old on average) on red soils. It fermented with indigenous yeasts in 225-liter tinajas and a brick vat, all built with red clay from Mallorca. It matured in the brick vat for some three months, and no sulfur was added to the wine at any point of its fermentation, élevage or bottling. 4 Kilos 'Motor' Callet 20204 Kilos, the project created by Francesc Grimalt and Sergio Caballero as a scion of Ànima Negra in Mallorca in 2006 is the quality leader of the island. They have around 15 hectares of vineyards on the island, and many of the vines grow in what is locally known as "call vermell" soil (ferrous red clay with limestone and small to medium-size rocks). 2019 was a ripe and low-yielding vintage that delivered concentrated wines, while 2018 was more balanced and typically Mediterranean. 2019 was quite concentrated, a year with a lot of color and powerful wines. 2018 was much cooler, and the wines are fresher and transparent.
