Callie has grown up with wine in the blood. It was family holidays to Chianti in Italy, and tasting’s at Louis Roederer in France that sparked a serious passion in Callie from a very young age. Having studied psychology and criminology at Melbourne University, and qualifying as a chef it was the lure of wine and more so vineyards that she just couldn’t resist. She’s now studying wine making at Charles Sturt University, and has already worked at some A-list wineries, including De Bortoli in the Yarra Valley, Littorai Wines in California and Fattoria Zerbina in Romagna.

This is a smashing combo of classic Alsace and northern Italian style grigio. Bursting with Apple, pear, some honeysuckle spice, and a hint minerally goodness too that you don't often find at this level. It's the lighter side of mid-wright packed with crispy fruit and plenty of it the focus to a fine, citrus-driven fresh with lots of crunch and energy. The quintessential drink don't think wine.

Enlists all of grigio's strongest varietal trademarks from the gentle blush colour and scents of pear, honeysuckle and apple to the savoury nod on the palate, crisp acid flow and touch of salty almond to close. Made by sommelier-come-Italian wine rep-come Italian wine tragic, James Scaresbrook, his renditions of Italian varietals are some of the most convincing you will find. That's not to say I like them because they're mimicking the Italians. Nup, not at all, and in fact the fruit spectrum generally shows it's antipodean origin. Through intelligent winemaking techniques (often observed in his own travel in Italy) he brings texture and aromatic complexity to these varieties. It's a recognition of how these varieties work with food and transports them from dry white and red wines to something with altogether more interest.

A recent appointment trying through his range only highlighted what good things James is doing. His wines are all on point with thougtful winemaking inspired their homes in Italy but not dogmatically so. James is happy to changed tact here or there if he sees something not working or vice versa if a wine is expressing itself in a way he likes but moves away from his original idea hes is not afraid to let it do its thing.

Quite possibly the most delicious Pobblebonk to date. Riesling, friulano, pinot grigio and ribolla gialla are the friends, each fermented wild in used French oak, on full solids and later blended. It’s heady with meadow flowers, lemon blossom and hints of lemon verbena, really spicy with nutty, leesy aromas, and the palate is both textural and alive with fine acidity. Light to mid straw colour in the glass, the bouquet savoury with some nutty notes possibly from barrel ferment, adding layers to the floral and spicy fruit aromas. Deliciously intense fruit on palate with a touch more dimension than the Quealy pinot grigios. It's truly more than the sum of its parts. How do you make a melange of fruity, bitter and salty so perfectly? So easygoing, delivering the goods, not stingy on flavour, not pushy with perfume. Just right. Made in stone lagars and aged in cement tanks along with some large old wooden vats, it's a very typical Dão blend of Touriga Nacional, Tinta Roriz (elsewhere, Tempranillo), Alfrocheiro and Jaen (aka Mencia).

A Descoberta means 'to be discovered' and the somewhat mystical label, a box tagged 1942 is a folkloric reference to an early version of a time capsule a box hidden in the stone walls of the house of Passarella containing a will to be opened 50 years hence and directing the riches of the box be re-distributed to the poor. The box was empty. Enrichment comes from the intangible not the material, it seems ...

A lovely wine supple, fleshy and spicy, with extra delicate tannin and oak. From lead-off, the cherry-chocolate fruit really shows the Dao granite, and is laden with wiry dark herbs. In the mouth, it's fleshy-meaty and mineral fresh - round with good movement and fruit-earth interplay. It has excellent presence in the mouth but is not reliant on weight for the show. Wonderfully composed, it sits and radiates, effortless in affect. Gorgeous delicate tannin is the frame, rimming the mouth and allowing the fruit and spicy acid to radiate delicately. A wonderful advertisement for varietal blends.

Estate grown field blend of Pinot Gris, Pinot Blanc, Gewürztraminer, Chardonnay Musqué, Riesling and Grüner Veltliner. Up to 7 days of skin contact before pressing. Natural co-ferment and maturation in a Pozvek foudré for 9 months on full lees. 100% malolactic fermentation. Bottled in January 2024 unfined and unfiltered.

Amber hue in the glass, this wine is complex and highly aromatic with scents of fresh apricot, musk and lychee. Peach, beeswax and subtle smoky notes. A creamy mid palate with a refreshing saline finish.

Even the entry-level white 2020 Candea Blanco, a regional blend of equal parts of Dona Blanca, Verdello and Treixadura fermented and kept with lees in stainless steel for one year, shows character, cleanliness, precision and freshness beyond the price point, and it transcends appellation and vintage and is offered with some time in bottle. It has only 12.5% alcohol and an expressive nose of herbs and flowers, and it is balanced, harmonious and elegant and finishes dry and long with a tasty and salty twist. Handago’ means Handa area/village/city where Kunizakari has been located since 1844.

This Sake is made with 100% local rice from their contracted rice farmers. Delicate citrus tones on the nose, clean and light texture and Umami from the rice, fully flavoured with fresh grape fruitiness.

‘Karakuchi’ means dry and crisp, and this Sake has a beautifully dry, crisp and clean finish.

A blend of vineyards in Clare Valley blending cabernet sauvignon, malbec, sangiovese and grenache. Clever. Their own ‘classico’. The new label reversed the colours on this one, more black on black with white font, and it looks sexy as.

Gorgeous wine. Supple, succulent, lush with dark fruit character, new leather, tobacco, mint and sage leaf characters with a fine, graphite minerally character through it all. It feels warm-hearted and kind of generous but keeps to the medium weight brief. It rolls with flavour, energy and tension of refined tannins through a long, mouth-watering finish. Pooley Wines has an historical property and two separate vineyards at each end of the Coal River Valley in southern Tasmania. The Coal River Valley has developed a worldwide reputation, and is ideally suited, for the production of cool-climate wines such as Pinot Noir, Riesling and Chardonnay. Members of the Pooley family have been actively involved in the business for three generations. Their longstanding passion and commitment to fine wine are your assurance of un-compromising quality.

Comes mostly from the family vineyards in Richmond and Campania, Coal River Valley. The fruit was chilled to 5 degrees then whole-bunch pressed to tank. Cold settled and racked to tank for ferment. 3 months on fine lees with a total ferment time of 14 days. Alcohol: 13.3 PH: 3.1 TA:  9.0 T/Ha Bottle Date: 2th August 2023. Residual Sugar: 0 g/L.

‘A vibrant aroma of citrus blossom, candy apple and yuzu on the nose. Bright characters of white peach and apricot follow on the palate with subtle notes of green apple and beeswax. Strong acid and persistent length finish this lovely wine.’ Anna Pooley, Winemaker.

Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end. 

Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.

The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.

Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.

Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.

The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

Black tea and Umeshu blended. Ume and tropical notes on the nose with almond character. Medium body Umeshu with a creamy texture, the palate shows clean sweetness and good quality black tea, tannin and clean acidity. The finish is clean. Chilled Umeshu straight, over ice,or cold spring water. Great for Umeshu cocktail.
