Thymiopoulos Xinomavro Young Vine 2022A blend of higher altitude parcels around the village of Fytia and the warmer, lower elevation parcels
adjacent to the village of Trilofos. Vines are young and non-irrigated at an altitude 200-500 metres on Schist, granite and limestone. Naoussa’s region warm continental climate with moderate rainfall throughout the year. Cooling winds from Vermio mountain are crucial for the quality of the grapes.
Grapes are hand-picked, 75% destemmed, macerated for 12-15 days and fermented in stainless steel tanks for 3 months and 8 months in concrete tanks.
Fresh strawberries, cherries, and raspberries, potentially with hints of wild herbs, spices, and even a touch of floral elements weaving themselves in too. The palate offers a juicy and refreshing experience, with bright red and black fruits dominating. Kir-Yianni Naoussa Village Xinomavro PDO 2021NAOUSSA is produced from a strict selection of Xinomavros grown on both Estate (younger vines) and small vine growers’ parcels around the different areas of the PDO zone. The villages of Naoussa offer a most interesting diversification on their hilly terrain in terms of altitude, slope, soil structure, orientation etc. These conditions shape an intriguing mixture of meso-climates.
Vibrant red and black fruit on the nose, with aromas of strawberry, cherry, and plums. A crisp and fruit-forward mouth with delicate notes of sweet spices and tobacco. Nico Lazaridi Cavalieri Xinomavro 2021The grapes come from selected old vines over 40 years old, giving low yield per hectare with good concentration. Classic red vinification and malolactic fermentation. The wine matures in 500L oak barrels for 24 months and then additional 6 months in ideal cellar conditions.
Pale red colour. Complex nose with aromas reminiscent of ripe red fruits, notes of spicy spices, herbs, tomato leaves and cedar. Full mouth with high acidity and tannins with a pleasant long aftertaste.

The ‘Ramnista blocks’ are the source of Xinomavros for this wine; ?ach vintage is a selection of the best parcels from that specific area. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.
