Kirilly Gordon is a quiet achiever. Her force is much greater than her stance. The humble Bowerbird Wines is the most underrated producer in the state. By day she's Denton in the Yarra and by night Bowerbird Wines soar. Kirilly's turning point in the wine industry was working at Bindi, where inspiration by Bill and Michael Dhillon came to the realisation that nurturing vines and grapes to create delicious quality wines is a pretty great way to live a full life. And I'm very glad about that.
Don't judge a book by its cover here. On first open it's steely with laser-like precision and just-ripe stone fruit, lemon curd and a delightful saline edge. As it opens in the glass we see it unfold. Ripe peach, honeysuckle and fresh nut characters alongside the Bowerbird silky finesse that holds everything together. The compression of power is becoming a key feature of what is one of Australia's finest white wines. It's refreshing to see the varietal hegemony of the usual suspects being consistently challenged. This, from a celebrated cool year, is at the start of a long and promising journey, somewhat shy, but layered with interest. Green almond, pear, pickled peach, pineapple quince, lemon balm, mint, young sage, oyster shell and a rocky, pumice-like mineral note, which is echoed by the ultrafine pithiness of the palate. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.

Yeringberg Marsanne Rousanne 2016Marsanne 59%, Roussanne 41%. Our white Rhône blend is a subtle wine that displays restraint and quiet power. It starts subdued, with hints of pear, honeysuckle, lanolin and quince. With air it expands, building depth and breadth, showing notes of honey, lemon and jasmine. On the palate, it's both taut and well rounded, savoury and subtly pithy, but also spicy and gently viscous. It's a fabulous food wine that manages to complement both delicate and more fully flavoured dishes and, unusually, satisfies both white and red wine drinkers. Full of promise, the 2016 is certainly enjoyable now, and will continue to evolve over a number of years. SANDRA DE PURY
