Small part of the Assyrtiko ends its fermentation in oak barrels and matures for 6 months by performing the battonage. The rest of the wine stays in stainless tanks in contact with the fine lees.
Pronounced aromas of citrus, white stone fruit, botanical hints harmonically combined with notes of honey and jasmine, revealing the short maturation in oak barrels in the presence of fine lees. It is full bodied with a pleasantly high acidity and long aftertaste.

Casa Rojo Ribera del Duero Clon 98 2020100% Tinto Fino, from the area of Castrillo de la Vega, located at an average altitude of 800 meters, in the province of Burgos. The grapes come from old vineyards between 26 and 50 years old, all owned by viticulturists in the area. Fermented and aged (12 months) in concrete tanks.
Heading towards a more black fruit profile with a black currant, creme de mure thing going on and a hint bitcumen and turned earth. Mid-weight in style with nice concentration and push from the darker fruit profile. It delivers plenty of concentrated fruit but does it all with bounce and vibrancy at the same time.

Sierra de Tolono La Dula Rioja Garnacha 2022I've always had a soft spot for her Garnacha, and the 2021 La Dula, with its floral, perfumed and expressive nose could be the finest vintage of this wine. It was produced with grapes from small ancient plots in Rivas de Tereso and matured in amphora and foudre for eight months. It's open, showy and terribly elegant, super young and fruit-driven, reminiscent of fresh grapes, not terribly complex but very pleasant and easy to drink. It has a medium-bodied palate with 13.5% alcohol and a serious and chalky texture. It should develop more complexity with time in bottle. 6,500 bottles produced. It was bottled in August 2024. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.
