Gewurtztraminer can be often misunderstood with low quality examples from the and 80's and 90's still in the minds and on the palates. This is a great wine to help change that mindset. Floral notes with honeysuckle leap from the glass with a hint of white pepper and the traditional spiciness. Due to an drier than normal vintage the alcohol is lower than usual and coming in at less than 1g residual sugar, there is a mineral freshness not often seen from this varietal. The palate follows the nose but brings in elements of stone fruit and sweet spice. If you haven't had a Gewurtztraminer in a hot minute, this is perfect. RICH
Hard as it may be to believe, this gewurz has stacks of yellow rose and star fruit aromas, but is only medium-bodied and tastes so bright. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.

It starts subdued, with hints of pear, honeysuckle, lanolin and quince. With air it expands, building depth and breadth, showing notes of honey, lemon and jasmine. On the palate, it's both taut and well rounded, savoury and subtly pithy, but also spicy and gently viscous. It's a fabulous food wine that manages to complement both delicate and more fully flavoured dishes and, unusually, satisfies both white and red wine drinkers.
