Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Voyager Estate Chenin Blanc 2024Fruit for the Chenin Blanc comes from three organically farmed estate blocks on the Voyager Estate property. Voyager has some of the oldest Chenin Blanc in the Margaret River region, with some of the vines planted as far back as 1978. The vineyard soils are mostly gravelly loams with stony clay subsoils, providing excellent drainage and good moisture-holding capacity. The resulting fruit has exceptional balance.
One of the better chenin blancs from Voyager Estate to date as it has flavour and richness but stays neatly in the dry spectrum. Poached pears and quince, lemon balm and lime curd with an intriguing waft of lanolin and the tug of phenolics add to the palate's shape. There's refreshment throughout but also depth. Lovely. MMAD Chenin Blanc 2023 375mlI cut my teeth on chenin blanc, McLaren Vale chenin at that, but the wines I was drinking in the late 1980s didn’t bear a great deal of resemblance to this majestic offering.
I’m a bit blown away. Instead of being the steak knives in the range this vies for top spot. It has flavour and texture but it’s the way brine and smoky, reductive characters play in with the fruit that really gets you in. This is a sophisticated white wine. It’s all river stones and nashi pear, apple and cedar, though it’s defined by its smoke/salt/stone characters. Beautiful rosé. Bone dry. Strawberried and earthen, spicy and direct, with a slip of grape-skin texture and excellent citrus-driven length. Ah Tuffo! This wine seems to never fail us. Not only is it a wonderful example of classic Vouvray it always delivers that little x-factor and bit of pizzaz we like. That lovely clay/waxed citrus and quince fruit comes at you straight off-the-bat with that slaty chalky thin that chenin does in the Loire so well. Some apple and pear drop generosity on the palate is cut by crunchy acidity and a little hit of phenolic grip that stick all those beautiful flavours to your mouth. Domaine La Soumade Rasteau 2020Andre Romero founded Domaine Soumade in 1979 and is now considered perhaps the finest producer in the region. The village of Rasteau was elevated to AOC status alongside Chateauneuf du Pape and Gigondas and 2010, and we find that while the styles are similar there is more freshness in Rasteau than the other two. The Cuvee Prestige is a gorgeous wine, made from a classic blend of Grenache (70%), Syrah (20%) and Mourvedre (10%) made with an extensive fermentation and maceration of nearly four weeks to extract colour, favour and tannins, following very gentle maturation in a combination of old 4,000L oak vats (foudres) and concrete tanks. Domaine la Roubine La Grange de Briguieres Sablet 2022The personality of the maker - generous and jovial - is on full display via black and red fruits while blue florals and the liquorice that jumps out of the glass, give the wine it's aromatic swagger. On the palate too, it's direct; big on flavour and impact with that same red and black fruited attack laying the groundwork for a more complex array of mineral, hung meat, liquorice, dried herbs and smoke. Pretty much like falling head first into a hypothetical vat the Southern Rhone itself. Medium to full bodied with plenty of structure to cope with anything from the bbq to the one-pot wonder.

Damien Pinon Vouvray Brut NVThird generation vignerons, the Pinons have 25 hectares in Vernou-sur-Brenne. 50% of their production is sparkling and 50% still wine with nothing sold off to the négoce.
We have long loved the wines of Damien Pinon and when we first tried this little number we were pretty stoked. Great sparkling Loire is such a treat. It captures all that zingy, racy, pure goodness of chenin blanc while bringing the added dimension of bubbles into the equation. They seem like a perfect partnership and we absolutely love this wine.
Quince and granny smith, talcum powder, quartyz spice and a gently honeysuckle, floral element that floats deliciously around in the background. Its pure and precise but fills out across the palate with each sip. Sometimes, Loire Sparkling is a little too lean but this deliver plenty of fruit at the same time to balance of the fine, minerally acidity.
