Dewazakura Dewa Sansan Junmai Ginjo Sake 300mlDewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture. This rice makes a very soft and deep flavoured style of sake. It shows characters that resemble wine and has hints of herbs, yeast, and mushrooms. Suertes del Marques 7 Fuentes Tinto 2020Village wine. Suertes del Marqués village red is a blend of Listán Negro and Tintilia. The style of García’s entry-level red has evolved considerably since the early days. Today it’s a prettier, lighter-bodied and more thirst-quenching wine. The main component remains the wildly aromatic Listán Negro with a small portion of Tintilia, entirely fermented in small tanks with indigenous yeast and a short, gentle maceration.
The name refers to the seven climats in the D.O. of Valle de la Orotava. Today Suertes draws the raw materials from 35 separate plots, from vines ranging from 10 to 100 years old, at a range of altitudes (up to 800 metres) on the slopes of Mount Teide. The Listán Negro is grown mainly in cordón trenzado, while the Tintilia (from the Bocanegra plot) is trellised to the espaldera system. Each parcel begins vinification separately in stainless steel before blending and aging in small concrete tanks (70%) and mature French demi-muids (30%).

Domaine Plageoles Gaillac Contre Pied 2019Red. Organic. To be contre-pied is to be diametrically opposed to something. In this case, this carbonic Duras is the opposite of the rustic, sleepy wines associated with this variety (and plenty of Gaillac rouge in general). This wine originates from a block of clay/limestone soil in Cahuzac-sur-Vère. The winemaking takes in a short carbonic maceration followed by six months aging in concrete tank.
Florent Plageoles told us that he felt that Duras grapes would take to the Beaujolais treatment, et voila, Contre Pied has now become a mainstay of the Plageoles roster. Expect crunchy acidity and thirst-quenching satisfaction—sappy red fruits, invigorating and tensile acid and soft grainy tannins surround a plump, cherry-like weight. Hints of dark chocolate and spice round out the steely skeleton. In short, a super delicious and unique carbo-styled red.

This is a sample drawn before bottling. A vibrant hue in the glass, and a beautifully pure and eager nose of black cherry, blackcurrant and damson fruits. The palate remains true to the nose, with that same sense of purity and an underbelly of soft chalk, before a sappy cherry-skin character at the end. Modestly extracted tannins, firm but not over done, with nice acidity for this warmer vintage, this should evolve nicely for some years, but should be ready to go within a year or two. Suertes del Marques La Floridita Tinto 2021Previously this wine was only available to the Canary Island distributor however after some convincing Jonatan has released some of this light red for us to play with. It is pure Listán Negro from old vines in the Paraje Las Suertes. It fermented destemmed in concrete vats and was pressed after four days to finish fermenting without skins in 500 litre used oak barrels, where the wine was kept for three months.
Beautifully ruby hued showing a spicy cinnamon and dried herb edge with tangy red raspberry, cherry and summer plum fruits with super light tannins, a stony element and subtle floral notes. Medium-bodied, powdery tannin, very ‘mineral’ acidity, bright but sitting in the wine well, raspberry and plum, complex and chalky firm on a long finish, a little seaweed in the mix. Crisp. This Junmai sake has been matured in tank more than 12 months. It has slight golden color, and full of flavour, complexity and good acidity.Yamahai is a very old and traditonal technique, and Tengumai have mastered this technique and it is reflected in this sake. Mount Horrocks Cabernet Sauvignon 2022From biodynamically (certified) grown vines. This switches things up for the general character of Clare Valley cabernet wines, lighter, brighter, frisky almost, lots of greenery and peppery spice, almost minty elements in dark chocolate, cassis, boysenberry characters to taste. There's a crispness to the wine, bright and lively, the herbaceous notes leading the way but not totally defining the wine. Fine, light tannins hold court. The perfume matches the flavours, a big fog of freshness, herbal detail and almost a sense of 'purple' if synesthesia is your thing. All up, a wine of vigour and good energy, though you'll be wanting cabernet on the more vibrant side overall. Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
