PWS Thank You Fortified 500mlFor those of you who may remember we used to have 3 big barrels of fortified wines out the back of the store where you could re-fill your own bottles, or buy from us, a selection of Stanton & Kileen Muscat, Topaque and Ruby Fortified. After many years these bottlings fell out of favour and with room growing to a premium at the store we got rid of them.
But what to do with all that wonderful sticky goodness? The juice was too good to just pour away and we really had a bit of a soft-spot in our heart for these wines. In jumps crew at Stanton & Kileen help us out with our little conundrum. They expertly blended the 3 fortifieds together with a little fresh stock from their own holdings and worked a little magic at the same time. The result is the PWS Thank You Fortified.
This is such a magical combo or red fruits blended with spicy muscat florals and a hint of earl grey tea. It's beautifully luscious and sweet like a muscat but a dollop of strawberry and raspberry fruit elevate the nose with a little twist on the traditional fortified. Delicious!

Pioneiro Moscatel Roxo NVMy love of fortified wines is no secret, in fact I am loudly proclaiming it to any and all who are willing to listen (usually that's a small group admittedly). This is a new one for me and it is one hell of a wine. Burnt fig, orange peel, walnut, black tea and a hint of fish oil all intermingle on the really complex and decidedly enticing nose. The 2021 Coutet has another refined and (for Coutet) low-key bouquet that gradually finds its voice: quince, white peach, pineapple and beeswax scents. The 2020 Coutet has a pale lemon-gold color, waltzing out of the glass with energetic notes of lemon tart, pink grapefruit, green mango and lime blossoms, with hints of chopped almonds, clover honey, candle wax and straw, plus a waft of sea spray. The palate is all class, featuring ethereal intensity and amazing poise, enveloped in a satiny texture and seamless acidity, finishing long and mineral laced. The Coutet 2009 is a sensational effort from Philippe Baly and his team. It has a fragrant nose of honey, vervain tea, pineapple, frangipane and apple-blossom, well defined if needing a little more vigour at the moment. The palate is vibrant on the entry, informed by touches of apricot and orange peel, very focused and tensile towards the long, sensuous, viscous finish. Fonseca vintage Ports are always among the most attractive and long-lived. This 2003 conforms magnificently to that model. It is structured, rich, powerful and opulent. Sporting an opaque, black-colored robe with dark purple trim, the 2003 Fonseca Vintage Port exhibits a nose of profound depth. Its sweet black mass of dark fruit and spice aromas leads to a character of immense depth, richness, and weight. Full-bodied, viscous, and almost impenetrable, this dense, backward port is powerful and exceptionally long in the finish. Possibly the most masculine Fonseca I've ever encountered, it coats the taster's palate with licorice, jammy black fruits, and notes of chocolate that last for over a minute. de Fargues 1986Fairly deep gold-tinged color. Superripe aromas of pineapple, cooked apple, honey and white raisin. Huge, thick and three-dimensional; shows a powerfully honeyed character and deep peachy fruit in the mouth. Almost aggressively young today, with the chewy character and uncanny richness shown by a number of these '90s. Slight heat and a note of mint on the very strong back end. After a scorching summer, the 1990 de Fargues harvest began early (on September 18) and the fruit was picked over 4 tries until October 10 – the earliest harvest on record. It is the most powerful of the trilogy. Delivering 130 grams-per-liter residual sugar at 13.6% alcohol, it has a prodigious bouquet of over-ripe oranges, toffee apple, chlorophyll and even a faint hint of chocolate. The palate is medium-bodied with a luscious ripe mandarin and apricot-tinged entry, building wonderfully to a botrytis-laden finish that fans out like a firework, leaving traces of cumin and dried orange peel on the long finish. Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. Artisanaly distilled and obtained from a unique infusion of juniper berries, muscat grape, mountain pine, cembra pine, mint, cardamom and coriander reminding of the Asiago plateau in the north of the Veneto region, where the Poli family comes from. This is a heady and perfumed gin that is at once powerful and refined. A truly unique product that speaks of its home in the hills and of the philosophy of this family run operation.

We have matched it with our very own Vermouths and Bitters from its western counterpart Turin Vermouth. Their philosophy is to maintain tradition through the production while sourcing aromats and herbs from all over the world and based on the local wines of the Piemonte's hills. Together this forms once of the world great classic cocktail- the Negroni.
This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.

1 oz. Gin
1 oz. Sweet vermouth
Instructions
Stir Tuve Bitters, gin, and vermouth in an ice-filled tumbler; garnish with orange slice.
