Thymiopoulos Xinomavro Young Vine 2022A blend of higher altitude parcels around the village of Fytia and the warmer, lower elevation parcels
adjacent to the village of Trilofos. Vines are young and non-irrigated at an altitude 200-500 metres on Schist, granite and limestone. Naoussa’s region warm continental climate with moderate rainfall throughout the year. Cooling winds from Vermio mountain are crucial for the quality of the grapes.
Grapes are hand-picked, 75% destemmed, macerated for 12-15 days and fermented in stainless steel tanks for 3 months and 8 months in concrete tanks.
Fresh strawberries, cherries, and raspberries, potentially with hints of wild herbs, spices, and even a touch of floral elements weaving themselves in too. The palate offers a juicy and refreshing experience, with bright red and black fruits dominating. Domaine Joly Cotes du Jura Poulsard 2022Managed by Cédric Joly, Domaine Joly encompasses approximately 6.5 hectares and offers a comprehensive range of Jura wines. The reds are vinified from fully destemmed grapes and fermented with indigenous yeasts, with about 15 days of skin contact. They age for a relatively short period of six to seven months, leading to an early release. Joly explains, "When I took over from my father 30 years ago, he instilled in me the idea that it's easier to correct a wine with a little chaptalization rather than playing around with artificial acidities. Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail.
