Callie has grown up with wine in the blood. It was family holidays to Chianti in Italy, and tasting’s at Louis Roederer in France that sparked a serious passion in Callie from a very young age. Having studied psychology and criminology at Melbourne University, and qualifying as a chef it was the lure of wine and more so vineyards that she just couldn’t resist. She’s now studying wine making at Charles Sturt University, and has already worked at some A-list wineries, including De Bortoli in the Yarra Valley, Littorai Wines in California and Fattoria Zerbina in Romagna.

This is a smashing combo of classic Alsace and northern Italian style grigio. Bursting with Apple, pear, some honeysuckle spice, and a hint minerally goodness too that you don't often find at this level. It's the lighter side of mid-wright packed with crispy fruit and plenty of it the focus to a fine, citrus-driven fresh with lots of crunch and energy. The quintessential drink don't think wine.

Enlists all of grigio's strongest varietal trademarks from the gentle blush colour and scents of pear, honeysuckle and apple to the savoury nod on the palate, crisp acid flow and touch of salty almond to close. Made by sommelier-come-Italian wine rep-come Italian wine tragic, James Scaresbrook, his renditions of Italian varietals are some of the most convincing you will find. That's not to say I like them because they're mimicking the Italians. Nup, not at all, and in fact the fruit spectrum generally shows it's antipodean origin. Through intelligent winemaking techniques (often observed in his own travel in Italy) he brings texture and aromatic complexity to these varieties. It's a recognition of how these varieties work with food and transports them from dry white and red wines to something with altogether more interest.

A recent appointment trying through his range only highlighted what good things James is doing. His wines are all on point with thougtful winemaking inspired their homes in Italy but not dogmatically so. James is happy to changed tact here or there if he sees something not working or vice versa if a wine is expressing itself in a way he likes but moves away from his original idea hes is not afraid to let it do its thing.

Honey, aniseed, dried herbs, almond, pink grapefruit and green pear. It’s juicy, but kind of saline, tight and flecked with a fennel and herb perfume, a bit of chalky texture with some grip and energy on a finish of good length and some lemon rind. I like this. Quite possibly the most delicious Pobblebonk to date. Riesling, friulano, pinot grigio and ribolla gialla are the friends, each fermented wild in used French oak, on full solids and later blended. It’s heady with meadow flowers, lemon blossom and hints of lemon verbena, really spicy with nutty, leesy aromas, and the palate is both textural and alive with fine acidity. Light to mid straw colour in the glass, the bouquet savoury with some nutty notes possibly from barrel ferment, adding layers to the floral and spicy fruit aromas. Zind Humbrecht is one of the unquestioned kings of aromatic whites. His ceaseless drive to create the world's greatest examples of his varieties is nothing short of remarkable as are the resulting offerings. A devoted proponent of Biodynamics, a gifted presenter and communicator and a towering figure of modern wine, the first Frenchman to be awarded the MW (International Master of Wine) he has justifiably earned his reputation as one of the legends of modern wine.

The Tuckheim Range is the value tier and represents classic Alsatian whites from a regional blend of grapes as well as estate fruit. These vineyards are grown on the valley floor, where the glacial debris of rolled stones, granite and gneiss has settled over the aeons. Wine from these soils tends to have a lovely fruit profile underpinned with a stoney-mineral tension that screams 'drink me' and marks the wines with the typical mineral streak of Alsace.

Pooley Wines has an historical property and two separate vineyards at each end of the Coal River Valley in southern Tasmania. The Coal River Valley has developed a worldwide reputation, and is ideally suited, for the production of cool-climate wines such as Pinot Noir, Riesling and Chardonnay. Comes mostly from the family vineyards in Richmond and Campania, Coal River Valley. The fruit was chilled to 5 degrees then whole-bunch pressed to tank. Having had a relationship with the Bilbro family as importers of the Marietta wines some years ago we were delighted to find youngest son, Sam, was behind this new venture, Idlewild. In many ways the wines are the anitpathy of what so many believe Californian wines are supposed to be. Hunting out heritage stands of Italian and Rhone varietals (mostly in Mendocino County) Bilbro makes extremely interesting wines characterised by texture, savouriness and subtlety. Skin contact is a part of the wines as is a relatively non-interventionist approach; both indicative of the preferences of the younger brigade of Calfornia producers. PWS

The 2017 White The Bee Flora & Fauna, is a classy, polished wine to drink now and over the next few years. Green pear, mint, white flowers and light tropical overtones all grace this very pretty, expressive wine. The Muscat in particular adds an attractive aromatic flair. ANTONIO GALLONI

The colour tells a big part of the story: deep, dark amber brown. The scent is complex, sweet and pure with walnut, honeyed fruitcake, treacle, coffee bean and vanilla.
