Eric Bordelet Sydre Brut Tendre Apple Cider NVThe biodynamic orchards are comprised of trees upto 50+ years old containing 40-50 varieties of heirloom apples. The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Willie Smiths Heritage Blend Cider 750mlSituated on 115 acres, Wille Smiths is 30 minutes south of Hobart in the Huon Valley, a once thriving apple-growing region that exported apples all over the globe and earned Tasmania the title of the 'Apple Isle'.
Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name. Suertes del Marques 7 Fuentes Tinto 2020Village wine. Suertes del Marqués village red is a blend of Listán Negro and Tintilia. The style of García’s entry-level red has evolved considerably since the early days. Today it’s a prettier, lighter-bodied and more thirst-quenching wine. The main component remains the wildly aromatic Listán Negro with a small portion of Tintilia, entirely fermented in small tanks with indigenous yeast and a short, gentle maceration.
The name refers to the seven climats in the D.O. of Valle de la Orotava. Today Suertes draws the raw materials from 35 separate plots, from vines ranging from 10 to 100 years old, at a range of altitudes (up to 800 metres) on the slopes of Mount Teide. The Listán Negro is grown mainly in cordón trenzado, while the Tintilia (from the Bocanegra plot) is trellised to the espaldera system. Each parcel begins vinification separately in stainless steel before blending and aging in small concrete tanks (70%) and mature French demi-muids (30%).

Domaine Plageoles Gaillac Contre Pied 2019Red. Organic. To be contre-pied is to be diametrically opposed to something. In this case, this carbonic Duras is the opposite of the rustic, sleepy wines associated with this variety (and plenty of Gaillac rouge in general). This wine originates from a block of clay/limestone soil in Cahuzac-sur-Vère. The winemaking takes in a short carbonic maceration followed by six months aging in concrete tank.
Florent Plageoles told us that he felt that Duras grapes would take to the Beaujolais treatment, et voila, Contre Pied has now become a mainstay of the Plageoles roster. Expect crunchy acidity and thirst-quenching satisfaction—sappy red fruits, invigorating and tensile acid and soft grainy tannins surround a plump, cherry-like weight. Hints of dark chocolate and spice round out the steely skeleton. In short, a super delicious and unique carbo-styled red.

Suertes del Marques La Floridita Tinto 2021Previously this wine was only available to the Canary Island distributor however after some convincing Jonatan has released some of this light red for us to play with. It is pure Listán Negro from old vines in the Paraje Las Suertes. It fermented destemmed in concrete vats and was pressed after four days to finish fermenting without skins in 500 litre used oak barrels, where the wine was kept for three months.
Beautifully ruby hued showing a spicy cinnamon and dried herb edge with tangy red raspberry, cherry and summer plum fruits with super light tannins, a stony element and subtle floral notes. Chateau Montravel Rouge (Merlot) 2017This is 100% merlot from a 1.5 hectare vineyard located in Montravel, a sub-region of Bergerac.
The grapes are hand harvested in small lug boxes, in the cellar the bunches are destemmed and the fruits selected one by one by hand. The must is then macerated in micro oxygenated tanks, pump over every six hours, alcoholic and malolactic fermentations done in temperature controlled tanks. Aged for fourteen months on fine lees in 1/3 new and 2/3 one year old oak barrels.This is terrific Merlot - there is even greater vibrancy and verve to the 2017 then the 2016. the fruit is pure and ripe with fresh picked plum and red cherry fruit. Some classy oak wraps gently around some pretty and lifted violet notes. and red fruits. This has plenty of fleshy fruit but in a compact and vibrant frame. There aint much merlo like this in Aus. Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. Bordelet worked as sommelier in the leading 3 star Parisian restaurant, ‘Arpege’ where he became deeply familiar with the top winemakers and wineries of France. In 1992 he took over the tiny patch of family farmed orchards in Charchigné, in the heart of Normandy’s premium Cider producing area. Since then he has set about rescuing the ancient ‘heirloom’ varieties of pears and apples that produce tiny quantities and amazing flavour.
Produced from pear trees estimated to be about 300 years old. Poiré Granit has 25-80 grams of sugar per liter, yet it doesn't taste particularly sweet. This is due to the tannin and acidity, which Bordelet says is twice as high as the apple! Stunning as aperitif or with cheese or desserts. With just 4% alc/vol this can be enjoyed any time. 4 Kilos Motor Callet 2021The most impressive 2021 Motor Callet was produced with 70% Callet and 30% Fogoneu at only 12% alcohol and with mellow acidity and lovely fragility. This comes from younger vines (15 years old on average) on red soils. It fermented with indigenous yeasts in 225-liter tinajas and a brick vat, all built with red clay from Mallorca. It matured in the brick vat for some three months, and no sulfur was added to the wine at any point of its fermentation, élevage or bottling. It's young, perfumed, expressive and captivating, with intense floral aromas, great purity and elegance. The palate is light to medium-bodied with flavors of acid berries and a piquant finish. 10,000 bottles were produced. It was bottled in March 2022.
