The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name. Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. In 1992 he took over the tiny patch of family farmed orchards in Charchigné, in the heart of Normandy’s premium Cider producing area. Chateau Montravel Rouge (Merlot) 2017This is 100% merlot from a 1.5 hectare vineyard located in Montravel, a sub-region of Bergerac.
The grapes are hand harvested in small lug boxes, in the cellar the bunches are destemmed and the fruits selected one by one by hand. The must is then macerated in micro oxygenated tanks, pump over every six hours, alcoholic and malolactic fermentations done in temperature controlled tanks. Aged for fourteen months on fine lees in 1/3 new and 2/3 one year old oak barrels.This is terrific Merlot - there is even greater vibrancy and verve to the 2017 then the 2016. the fruit is pure and ripe with fresh picked plum and red cherry fruit. Some classy oak wraps gently around some pretty and lifted violet notes. and red fruits. This has plenty of fleshy fruit but in a compact and vibrant frame. There aint much merlo like this in Aus. Terroir Sense Fronteres Brisat 2022Brisat is a blend of 75% Garnacha Blanca and 25% Macabeu from 15- to 35-year-old vines around Capçanes, grown at between 300 and 350 metres on sandy clay soils locally known as panal. The fruit is harvested earlier than typical for the area—when flavours are ripe and acidity is still vibrant.
Brisat in Catalan refers to wine fermented on skins. Half the grapes were direct-pressed, and the other half macerated in their juice for five to seven days. If you tasted earlier releases of Brisat, we should note that these days Huber and Peceric are searching for more finesse and expression of place in this wine, and thus have toned back the ‘skinsyness’. The must fermented with indigenous yeasts before the wine rested on lees for six months in tank. It was bottled unfiltered.
