I think this is the first time I have ever put a Prosecco to my nose and exclaimed, 'oh wow'. This smells simply lovely. Intensely appley – all at once ripe, green-skinned, crunchy, baked, caramelised. And with a hint of angelica. Bone dry on the palate with a fine fizz. Apples, but fresh and green and super-crisp. Broad and medium-weight with citrus peels, ginger snap biscuits. Sweet and with great depth. Apricot aromas develop then drift towards fruit salad. After a short time the wood come to the fore and water helps to release baked fruit.
PALATE
A complicated palate where the initial nose would lead you to expect plump fruits, what you get is a surprisingly dry element. The palate fleshes out as the first impact of the nose fades. Adding water brings out the caramelised elements balanced with the wood elements expected of a 15 year old.

Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. Artisanaly distilled and obtained from a unique infusion of juniper berries, muscat grape, mountain pine, cembra pine, mint, cardamom and coriander reminding of the Asiago plateau in the north of the Veneto region, where the Poli family comes from. This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. Pereira D'Oliveiras Madeira Malvazia Sweet Frasqueira 1991For madeira to get the classification frasqueira, they are required to be aged a minimum of 20 years in barrel, and a further 2 in bottle. The variety used for this madeira as well is Malvazia, a white grape, usually used in sweeter styles of Madeira, due to higher acid and create balance in the finished sweet wine. This particular vintage was bottled in 2019 and released in 2021, with a total of 28 years cask aging.
Here's Crazy Mary-Jane! A big herbal hit on the nose takes away any possibility of candy over-sweetness. Caramel and grilled nuts run around in a complex of wood notes, and excellent freshness partners aged and developed secondary characters. Herbal-columbine, toffee-tobacco, sweet but smoky and caney.
