Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.

I think this is the first time I have ever put a Prosecco to my nose and exclaimed, 'oh wow'. This smells simply lovely. Intensely appley – all at once ripe, green-skinned, crunchy, baked, caramelised. And with a hint of angelica. Bone dry on the palate with a fine fizz. Apples, but fresh and green and super-crisp. Pereira D'Oliveiras Madeira Malvazia Sweet Frasqueira 1991For madeira to get the classification frasqueira, they are required to be aged a minimum of 20 years in barrel, and a further 2 in bottle. The variety used for this madeira as well is Malvazia, a white grape, usually used in sweeter styles of Madeira, due to higher acid and create balance in the finished sweet wine. This particular vintage was bottled in 2019 and released in 2021, with a total of 28 years cask aging.
