Tengumai Yamahai Jikomi Junmai Sake 720mlThis sake is classic Tengumai, made using Yamahai method. 'Jikomi' means 'procedure' or 'method'. This Junmai sake has been matured in tank more than 12 months. It has slight golden color, and full of flavour, complexity and good acidity.Yamahai is a very old and traditonal technique, and Tengumai have mastered this technique and it is reflected in this sake. Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720ml
Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end.
Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

Terroir Sense Fronteres Brisat 2022Brisat is a blend of 75% Garnacha Blanca and 25% Macabeu from 15- to 35-year-old vines around Capçanes, grown at between 300 and 350 metres on sandy clay soils locally known as panal. The fruit is harvested earlier than typical for the area—when flavours are ripe and acidity is still vibrant.
Brisat in Catalan refers to wine fermented on skins. Half the grapes were direct-pressed, and the other half macerated in their juice for five to seven days. If you tasted earlier releases of Brisat, we should note that these days Huber and Peceric are searching for more finesse and expression of place in this wine, and thus have toned back the ‘skinsyness’. The must fermented with indigenous yeasts before the wine rested on lees for six months in tank. It was bottled unfiltered.

Raventos i Blanc 'Blanc de Blancs' Espumoso 2021Raventós i Blanc is a small, family-owned concern, based on 90 hectares at Sant Sadurní d’Anoia, which has been in the family since 1659, and has been a wine-growing estate since 1497. Their 'Blanc de Blancs' is a blend of Xarel.lo, Macabeu and Parellada, the varieties are fermented separately then blended before second fermentation. Minimum lees aging is 18 months and dosage is kept to a minimum, keeping it extra brut in style.
Typical of the Raventos i Blanc house style, this is a supremely elegant and delicately textured premium sparkler, featuring fresh apple and fine sand earthiness. The vintage plays an inevitable role here, it is a gorgeous rendition of this wine, the white that accompanies Stephanes revered reds, and has the track record to back it up, as well as the mountains of press. This is the current release to Australia and the few years in the bottle have drawn out more of those robust, ripe and rich stone fruit notes. It's still essentially a pup but you see some move towards expansion on the palate and more nuance now on the nose. More clearly defined aromatics that offer up hedonistic and sweetly perfumed fruit, wild flowers, nectarine and a glass full of mixed citrus juice (only way I can think of describing that character). It leans in to sensuality in the mouth, there it caresses as it easily fills your palate with its delectable fruit salad like array of flavours. It is easy to miss the force behind it, almost, it really hits the finish hard with a burst of rocky minerality and an emphatic punch of intensity that leaves your palate feeling stained. For me this is where I would like to drink this wine. While both youthful enthusiasm and some richer elements are at play. There is no doubt in my mind that most fans of Condrieu will ignore that and throw this in the cellar for a decade. Don't get me wrong, the wine will be super then too. I just love the power that 19 brings with the vigour and liveliness of Stephane's style and I find this part of its life to be particularly enjoyable. It's a tremendous effort. ROSCOE
