The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.

The Scavino family distinguishes itself from the beginning by their scrupulous care of the vineyards and passion for terroir. Second year in a row for this wine (new vintage) so you know it must be good. While they may be well know for their excellent Barolo this wine is always one that sucks us in when we try it. Nebbiolo from younger vines and those that don't quite make the cut go into this delicious Piemontese red. A melange of read and black fruits with roasted earthy notes from the neb component striking a beautiful counterpoint of savouryness to the sweet fruits. So plush and mellow but with a tingling spine of energy and fresh cut acidity. A wonderfull combo of vibrancy and velvety fruit. Love this wine!

The latest wine from Justin Bubb and the Babo team is a Langhe Nebbiolo, sourced from vineyards near the famed town of Castiglione Falletto. The sites mainly face southwest between 300 and 400 metres above sea level. The 2021 vintage came with challenges: spring frosts affected yields, and the summer months were warm, but the fruit quality at the end of the season was fantastic. Massolino Langhe Nebbiolo 2022Screwcap. Three sources here. First, Massolino’s younger vines in Serralunga—in other words, declassified Barolo fruit. Then, Monforte’s Cascina I Maschi (Massolino credits this cool, chalky site with giving the wine lifted perfume and freshness). And finally, a parcel in Alba on lighter, sandy-clay soils, bringing generosity of fruit. The blend is roughly one-third from each of these areas, and there’s little doubt the sum of these parts brings even more finesse and early-drinking appeal to what has always been an outstanding Langhe Nebbiolo.
The 2022 is another gorgeous release from this label. It is a pure-fruited, pretty wine (suggesting strawberry, cherry, violet, anise) with ripe, chalky tannins and a terrific, perfumed finish spiked with graphite-like minerality. Following very gentle extraction, it aged in large Slavonian oak casks for 15 months, as opposed to 24-plus months for the Barolo wine. To call this a bargain is to grossly understate the case!
