Thymiopoulos Xinomavro Young Vine 2022A blend of higher altitude parcels around the village of Fytia and the warmer, lower elevation parcels
adjacent to the village of Trilofos. Vines are young and non-irrigated at an altitude 200-500 metres on Schist, granite and limestone. Naoussa’s region warm continental climate with moderate rainfall throughout the year. Cooling winds from Vermio mountain are crucial for the quality of the grapes.
Grapes are hand-picked, 75% destemmed, macerated for 12-15 days and fermented in stainless steel tanks for 3 months and 8 months in concrete tanks.
Fresh strawberries, cherries, and raspberries, potentially with hints of wild herbs, spices, and even a touch of floral elements weaving themselves in too. The palate offers a juicy and refreshing experience, with bright red and black fruits dominating. The villages of Naoussa offer a most interesting diversification on their hilly terrain in terms of altitude, slope, soil structure, orientation etc. These conditions shape an intriguing mixture of meso-climates.

To put it plainly this is delicious! Everything you want in a Cote Du Rhone. Based in the Northern Rhone town of Tain Hermitage Jaboulet has transformed this cuvee over the past five years. Total production is about a third of what it used to be, and the focus is very much on quality. Bright fresh with a generous juicy Grenache mouth feel but enough stuffing and spice to keep it lively and mouth watering delicious. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.
