    Casa Castillo El Molar is a red wine from Jumilla prepared by the Finca Casa Castillo winery. It is a varietal Grenache.The grapes used for this wine are collected from fields located in trellises on the upland slopes of the Sierra del Molar. The climate is continental and Mediterranean and the vineyards, which grow on calcareous soils, were planted in 2005.

    Alcoholic fermentation, which is carried out for two weeks at temperature of 30 degrees, is performed in open vats under the ground before maceration takes place without the skins. The subsequent malolactic fermentation takes place in foudres in contact with the lees. The wine is aged for 12 months.The typical dryness of Jumilla, located in Murcia, along with low temperatures means that there are low levels of production yet with a high concentration.     Brisat is a blend of 75% Garnacha Blanca and 25% Macabeu from 15- to 35-year-old vines around Capçanes, grown at between 300 and 350 metres on sandy clay soils locally known as panal. The fruit is harvested earlier than typical for the area—when flavours are ripe and acidity is still vibrant.

    Brisat in Catalan refers to wine fermented on skins. Half the grapes were direct-pressed, and the other half macerated in their juice for five to seven days. If you tasted earlier releases of Brisat, we should note that these days Huber and Peceric are searching for more finesse and expression of place in this wine, and thus have toned back the ‘skinsyness’. The must fermented with indigenous yeasts before the wine rested on lees for six months in tank. It was bottled unfiltered.

    Prizing finesse over concentration, Serbian-born vigneron Tatjana Peceric has a beautiful touch with Montsant’s high-grown Garnacha and Cariñena. Except for the skin-contact white Brisat, the wines are fermented as whole bunches in concrete, amphorae and stainless steel (no oak is used), and extraction is as gentle as possible. In the cellar, Peceric works with the infusion model—a buzzy term for sure, yet we should not forget that this kind of no-bells-and-whistles winemaking is scarce in this corner of Europe. In short, the grapes are gently crushed by foot and taken off their skins at between eight and 12 days to continue fermentation. “We don’t need to extract tannin,” says Peceric.

    Another key to the style and quality here is that regulations allow for harvesting early for lower alcohol; minimum levels here are 12.5% for reds and 11.5% for whites (compared to 13.5% for reds and 13% for whites in the DOQ Priorat). This year’s Negre is a pure Garnacha, from mature vines sited around Capçanes. The 25-year-old (on average) bush vines sit at 350 metres on the mixed sandy clay soils (known locally as panal) with varied exposures.

    The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.

    The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.

    Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.

    Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.

    The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

    Cinq a Sept is French vernacular for the aperitif time of day. For the uninitiated, Vermouth is a wine based fortified aperitif typically having elements of herb, spice, citrus and bitterness. Most often the wine plays second fiddle to the recipe but with Cinq a Sept it shares equal billing. Expect fresh raspberry fruit laced with refreshing herbs, exotic spice and mild bitterness. Great on ice with a slice of orange or grapefruit, longer with a dash of soda or as a bit player in cocktails like Negroni. ALLIES

    I am totally in love with this product! Why? Because its flippin delicious! Pinot Based vermouth from the man behind Allies David 'Chappy' Chappman. He has just nailed it with this bright, bitter, summery drink. The subtle sweetness is beautifully balanced against the bitter citrus notes and the whole thing just sings. Of course, it's begging for a Negroni but this is so good I would just splash it on some ice with a citrus twist of your choice and a dash of soda. Enough said. MYLES, PWS

    Finca de Los Locos is an old, single vineyard wine grown high on slopes of the Cantabrian mountians north of the town of Banos. Arturo and Kike de Miguel’s grandfather planted the vines in the 1950s, though other farmers of the day thought he was mad to work such a difficult, rock-strewn slope when so much land was available on the flat plains of the Rioja Valley floor. Sixty years later however, this single parcel is consistently producing some of the finest examples of terroir-focused wine in the region. Made with 90% Tempranillo and 10% Graciano, Finca de Los Locos is black-fruited, decidedly cool climate and massively over delivers for the price. ALIMENTARIA

    Looking at the 2021s from barrel, the 2021 Lirac Antares shows the fresher style of the vintage yet still brings solid fruit and texture.     Antarès is the main star of the constellation of Scorpio. One of the basic principles of biodynamics is to work in harmony with cosmic rhythms. Antarès is a selection of vines located on hillsides facing North, at the Western end of the Lirac appellation, at an altitude of 160m. The vines are 50 years old. The harvest is fully de-stemmed. Each variety is vinified separately using  natural yeasts. The Grenache is aged in cement vats, the Mourvèdre in old French oak demi-muids  for 12 months.

    60% Grenache, 40% Mouvèdre farmed organically (Certified).Notes of strawberry, black raspberries, pine, sandalwood and a hint of ground black pepper in this ripe but restrained blend. A full-bodied and concentrated wine that maintains remarkable vibrance and acidity throughout. Fine-grained tannins accentuate its youthful appeal. Supple mouthfeel, we love the generosity of mid palate filled with ripe black berries and blue fruits and spices. Beautiful Lirac for all lovers of great Southern Rhone reds.

    Ripe black fruits, licorice, cloves and wood smoke present the 2021 Châteauneuf-du-Pape. Medium to full in body, the 2021 offers good concentration and freshness yet demands at least three more years in bottle to further integrate the grippy tannins.     Vanguardist-farmed Rende vineyard bush vines, around 55 years old; 60% whole bunch, with about seven weeks on skins; matured in 2200L Slavonian oak. The cool vintage has its say. Refined, fragrant and elegant, but savoury and spicy, too. Distinct nebbiolo/nerello mascalese riffs, more the latter – an increasing theme at this address. Dried cranberry and cherry, freeze-dried raspberry and orange, from dehydrated peel to the bitter orange note in amaro, chinotto, Campari … five spice, clove, green cardamom, white pepper, alpine herbs, sour plum, dried mint, pressed flowers, warm terracotta. It’s finer of feel. Is it lesser for it? Nope. It’s laden with so much flavour and etched with ultra-fine but authoritative tannins and refreshing acidity.     From a parcel of dry-grown bush vines planted in the 1940s, fermented as whole clusters and aged in a single, larger-format cask. Very fragrant aromatics with sweet spices and almost flinty, dry-stony elements to the nose, together with wild raspberries, ripe red plums and sappy elements. Dried-rose and orange-zest notes, too. The palate has a very succulent feel with great length and tautness and a firmer, more intensely structured feel. More orange peel and blood orange here with red berries, too. It’s firm and almost liqueur-like in intensity, with firm dusty tannin, and a dry plum and dried flower finish. Very good, but not quite as good as the other two single vineyard wines.     From the Onkaparinga Hills, a parcel of dry-grown bush vines, fermented as whole clusters and aged in a single, larger-format cask. This parcel was planted in the early 1970s and it has a sappy feel (whole clusters) and bright, very pure raspberries and some leafy elements on offer, as well as blueberries. The palate has quite smooth and ripe tannins, holds a fresh edge (low pH) and delivers a similar combination of red and blue fruits as seen on the nose. A little, chewy stone pop at the finish.     Dewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture. This rice makes a very soft and deep flavoured style of sake. It shows characters that resemble wine and has hints of herbs, yeast, and mushrooms. The palate has good zingy acidity, with citrus/lemon tang, and a clean and fresh finish with wonderful mouthfeel.

    From original '46 vines next to the High Sands block. The '23 grenache wines are very pale in the glass, and they are all a degree lighter in alcohol due to the cool year (one I love). A vintage like this really illustrates the kinship with the avant-garde grenache of Gredos, and with Barbaresco, and refined Etna Rosso (Girolamo Russo in particular), rather than almost anything from the Rhône. Savoury, dried red fruits, cranberry, cherry and redcurrant, warm terracotta, bergamot, potpourri, sumac, ground cinnamon, star anise, so tightly coiled, but also tensile, finely expansive in its flavour delivery. It's powerful with 14.5% alcohol and has good balance. This fermented 100% destemmed in concrete and stainless steel with indigenous yeasts and matured in oak barrels and vats for six months.     One of the most intriguing trends in Rioja today, mirroring developments in other wine regions around the world, is the emergence of primary, reductive wines. A prime illustration of this is the 2022 Finca de los Locos, crafted from a blend of 75% Tempranillo, 20% Graciano and 5% Viura. Sourced from a vineyard planted in 1981 in Baños de Ebro, Rioja Alavesa, it was fermented with native yeast and aged for up to 12 months in large oak foudres. The 2022 displays a deep purple hue and unfolds enticing aromas of blueberry, violets and herbs against a backdrop of oak.     Finca de Los Locos is often the chalkiest and most refreshing of Arturo de Miguel's reds and that's certainly the case here. Sourced from a parcel at 560 metres in Baños de Ebro, this is a well-judged cuvée of Tempranillo, 20% Graciano and 5% Viura, showing subtle stony reduction, good focus and depth, violet and mountain herb aromas, redcurrant and wild strawberry fruit and a pithy finish.     This is an impactful grenache made by somebody who prizes Italian wines. The tannins are an immense force field, with kirsch, strawberries and dried Mediterranean herbs, and a note of almond husk that gives noble bitterness. The density, poise and grace are thoroughly impressive. This is a structured grenache built for the cellar. Drinkable now, but best from 2027. (97) NED GOODWIN MW

    From the new estate vineyard for Pannell, an old but recently viticulturally retooled site in Blewitt Springs. It will be fascinating to watch this bottling over the subsequent years as Stephen and co get the full benefit of enhanced farming reflected in bottle, but this is a very bright start. There's presently a touch more flex and breadth than the other single site grenache bottlings, but still with the tenson of the year. Wild raspberry, redcurrant jelly, bitter red aperitivo, tamarind and sour cherry. Tannins are fine, insistent and sandy, acidity a driving force. This is a stellar debut. (96) MARCUS ELLIS

    Kenbishi is very classic – keeping same Sake making methods which involve Yamahai method and wild yeast. King of Sake rice ‘Yamadanishiki’ 100% used. ‘Mizuho’ means ‘ear of rice’, but in this case, Kenbishi meant it is ‘Junmai’. Blends of 2 YO to 8 YO tank aged Sake. Distinctive golden colour. Medium to full body. It shows honey, malt and nuts on nose. High in Umami and acidity. Texture is smooth and mouth coating warmth. Rich and complex on the palate with a crisp long finish.

    Sara’s tribute to “youth, tenacity, love and Grenache”. Who can argue …?
    Organically grown on a 10 hectare plot of degraded granite (Montsant’s only gravel patch), Dido has been in production since 2005. The blend is 86% co-fermented Garnatxa-Syrah (1/5 is Syrah, which helps the local Garnatxa ferment better), with 7% each Cabernet and Merlot. It’s picked early, and needs to be largely de-stemmed, so the fermentation takes place in two parts. A 15% portion is used as a starter – whole bunches take wild yeast and are covered with sulphur for 8 days. This is then released into the balance of the fruit, de-stemmed and un-sulphured, and away we go. After fermentation in old hogsheads, the wines are long-aged, more than 18 months – a first year in large raw concrete and then a further 6 months or so in large Foudre of 5000 litres.

    Bright and fresh red cherry fruit marked by mint and other local herbs, the wine shows the clear crunch of granite soil. Juicy and direct with macerated herbs, licorice and briar in lovely pastille fruit. Good concentration, rich-but-not-sweet country wine, it's all briar-herb-cane-brambly, with a nice little nudge of spice, allspice husk and leather in the soft savoury juice and a touch of chocolate in the soft leathery tannin. Clear and direct, with absolutely no wine-making clutter, it is delicately structured and savoury. A smasher!
