Made from 100% Malbec including fruit grown by local producers that Pascal consults to. About 70% is lighter and finer material from the limestone plateau (the causses) and 30% richer and denser fruit from the iron-rich gravelly terraces of the Lot River valley. The vines average 25-30 years and about 85% of the fruit is currently certified organic, with one grower at year 2 in conversion.
Fermented for a total of 20 days, with regular punch-downs for the first 3 or 4 days only. The 2021 The Farm Single Vineyard Cabernet Malbec is a singularly impressive wine: it is juicy and vibrant, but it is also layered with spice, rose petals, leaf/bramble and black tea nuance. The wine is detailed, incredibly so for the price (approximately $35AUD), and is possessed of the Clare Valley regional leafiness that so defines the Cabernets (and, to a certain extent, the Malbecs) from here. Super refreshing with a long palate that sizzles along to a long supple close.

No oak in this cuvee and it is so much better for it. That typical mulberry and boysenberry fruit leap out of the glass with a touch of licorice interspersed between wild bracken aroma. Approachable and fruity, with a soft, supple texture and dressed with a fine layer of smooth rich tannin. Vibrant and full of energy but still solidly built without feeling cumbersome or heavy. They really pull this off beautifully.

Petilia Quattro Venti Greco di Tufo Riserva 2020Quite a different beast to the 'entry' Greco offering. There's a palpable intensity, structure and savouriness to the wine. Peach, lemon curd and a refreshing saline grapefruit acidity all in the mix along with a little nutty nuance. The texture starts of creamy and round but is quickly usurped by a wall of drying, pithy tannin which draws everything in at the back leaving dry and lightly bitter, pleasing finish. Raventos i Blanc Brut 'De Nit' Rosado Espumosa Cava 2021A dry pink style of sparkling, using the classic blend of xarel.lo, parellada and macabeu, along with monastrell to create an amazing pink hue to the wine. Varieties are fermented separately in stainless steel before blending to create the base wine. Minimum of 18 months on lees in bottle before disgorgement, with a tiny bit of dosage at the end.
Dry pink of great elegance. A lovely faded rose pink colour, it smells of gently boozed strawberries, dusty rose aromatics - perfumed without any outrageous fruitiness or excess.
