The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Very cool wine. Almond oil and citrus pith on the nose slowly open to reveal orange blossom, green mandarin and saline notes. Some lovely phenolic grip add texture webbing the pristine fruits on the palate together nicely. It starts tangy and fresh with an array of citrus interspersed with rocky notes and green apple fruit. Super refreshing with a long palate that sizzles along to a long supple close.

Ronchi di Cialla Collio Friulano DOC 2022This really is one of the most fascinating, inspiring, and singular estates of Italy. An incredible history that spans centuries and that in just over a quarter century has become a benchmark producer for some of the rarest wines in the world. A noble and impressive feat.
The property with its steep terraces surrounded by chestnut, oak and wild cherry trees dates back to the Paiarchte of Aquiuleia and the Republic of Venice. Unusually, it sits in an Alpine valley that runs east-to-west rather than north-to-south 35 km’s from the sea and 35 km’s from the mountains which see harvest start a full two weeks later than anywhere else in Friuli while rarely exceeding alcohols of 12.5%

Petilia Quattro Venti Greco di Tufo Riserva 2020Quite a different beast to the 'entry' Greco offering. There's a palpable intensity, structure and savouriness to the wine. Peach, lemon curd and a refreshing saline grapefruit acidity all in the mix along with a little nutty nuance. The texture starts of creamy and round but is quickly usurped by a wall of drying, pithy tannin which draws everything in at the back leaving dry and lightly bitter, pleasing finish. This small gem in the heart of Collio was established in 1989 by highly respected oenologist Fabio Coser. Ronco dei Tassi was named after the population of badgers (tassi) on the estate, which like to carry out some grape selection of their own and steal the sweetest bunches. From fifty year old vines, this is aged mostly in stainless steel with a small portion going through malolactic in old barriques.
