Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Spinifex Papillon 2023Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. Very cool wine. Almond oil and citrus pith on the nose slowly open to reveal orange blossom, green mandarin and saline notes. Some lovely phenolic grip add texture webbing the pristine fruits on the palate together nicely. It starts tangy and fresh with an array of citrus interspersed with rocky notes and green apple fruit. Super refreshing with a long palate that sizzles along to a long supple close.

Mount Mary Marli Russell RP2 2021Grenache (60%) Shiraz (25%), Mataro (10%) and Cinsault (5%). It’s in keeping with my little Grenache theme this week, except it’s from the Yarra Valley!
It’s complex and a wine of many layers. Raspberry and blackberry, plenty of perfume and spice, hazelnut, something in the way of dried herbs and earth. Medium-bodied, no shortage of red and black fruit, rose oil, but also something a little more meaty and savoury in the mix, with fresh acidity, kind of like pomegranate, fine emery board tannin grip, and a fine ‘minerally’ finish of excellent length. Petilia Quattro Venti Greco di Tufo Riserva 2020Quite a different beast to the 'entry' Greco offering. There's a palpable intensity, structure and savouriness to the wine. Peach, lemon curd and a refreshing saline grapefruit acidity all in the mix along with a little nutty nuance. The texture starts of creamy and round but is quickly usurped by a wall of drying, pithy tannin which draws everything in at the back leaving dry and lightly bitter, pleasing finish.
