Chateau du Cedre Cahors 'Heritage' 2020“The 24-ha estate of Pascal and Jean-Marie Verhaeghe has done as much as any to improve the recent quality of Cahors and provide the challenge it should be giving to the most profound Malbecs of Argentina - and some of the other great wines of France. Made from 100% Malbec including fruit grown by local producers that Pascal consults to. About 70% is lighter and finer material from the limestone plateau (the causses) and 30% richer and denser fruit from the iron-rich gravelly terraces of the Lot River valley. The vines average 25-30 years and about 85% of the fruit is currently certified organic, with one grower at year 2 in conversion.
Fermented for a total of 20 days, with regular punch-downs for the first 3 or 4 days only. The 2021 The Farm Single Vineyard Cabernet Malbec is a singularly impressive wine: it is juicy and vibrant, but it is also layered with spice, rose petals, leaf/bramble and black tea nuance. The wine is detailed, incredibly so for the price (approximately $35AUD), and is possessed of the Clare Valley regional leafiness that so defines the Cabernets (and, to a certain extent, the Malbecs) from here. I think this is the first time I have ever put a Prosecco to my nose and exclaimed, 'oh wow'. This smells simply lovely. Everything is by hand here and the wines are uncommonly elegant and round compared to the more rustic versions we are used to seeing.
No oak in this cuvee and it is so much better for it. That typical mulberry and boysenberry fruit leap out of the glass with a touch of licorice interspersed between wild bracken aroma. Approachable and fruity, with a soft, supple texture and dressed with a fine layer of smooth rich tannin. Vibrant and full of energy but still solidly built without feeling cumbersome or heavy. They really pull this off beautifully.

Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.
