Vallformosa MVSA Brut NVThe 'MVSA' is made from the tradition Cava varieties Macabeo, Xarello and Parellada at the respective ratio's of 35:30:35%, the wine has seen 24 months of lees ageing and bears 9.5 g/l of residual sugar, but has the acidity to clean up the tail; it is a stylish and satisfying wine of great value. It is pale in colour with plenty of bubbles showing aromas of apples and pears, toasty bread and white flowers balancing the right amount of bubbles and acid. Zalto BalanceThe idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."
So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Zalto recommends the glass for deep, complex whites-Chardonnay and full-bodied Riesling, for example-to fully show their depth and subtlety while harmonising aromas and flavours without concentrating one element. Domaine Joly Cotes du Jura Poulsard 2022Managed by Cédric Joly, Domaine Joly encompasses approximately 6.5 hectares and offers a comprehensive range of Jura wines. The reds are vinified from fully destemmed grapes and fermented with indigenous yeasts, with about 15 days of skin contact. They age for a relatively short period of six to seven months, leading to an early release. Joly explains, "When I took over from my father 30 years ago, he instilled in me the idea that it's easier to correct a wine with a little chaptalization rather than playing around with artificial acidities. That's why I'm usually the first to harvest grapes compared to neighboring vineyards.”
