The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. The grapes are from 13 plots of Monastrell vineyards in La Raja (where the winery is located) between the mountain ranges of El Carche and La Pila. Zalto BalanceThe idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."
So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Varieties are fermented separately in stainless steel before blending to create the base wine. Minimum of 18 months on lees in bottle before disgorgement, with a tiny bit of dosage at the end.
Dry pink of great elegance. A lovely faded rose pink colour, it smells of gently boozed strawberries, dusty rose aromatics - perfumed without any outrageous fruitiness or excess. Nice false sweetness on entry -the balance is ultimately off-dry, juicy and gentle, with high quality delicate bubbles underpinning the fruit, cutting the fruitiness and running on to a super-gently acid close.
