Amen Break Cabernet Franc 2021There's certainly a bustle in the hedgerow here, with blackberry, black raspberry, leaf, dried roses and pencils. Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. Sauveroy 'Cuvée Ose Iris' Anjou Rouge 2020This family estate has been nestled in the heights of the Layon Valley in Saint-Lambert-du-Lattay in Anjou for three generations. We absolutely loved this at a recent tasting so just had to put it into this pack. Don't be surprised if you hear us talking about it some more because this is what cab franc should be. Soft and supple but countered with some fine powdery tanning and a whicked little crunch to the fruit. It explodes in the glass with raspberry, cherry, redcurrant and balckberry thast just swirls around and around. So vibrant with awesome balance. Rocher des Violettes Cot Touraine 2020This comes from a wide ranging age of vines between 5 - 129 years old on silty clay over limestone from the sites; Bel-Air, La Rochère, Le Grand Poirier and Les Borderies.
Made from Cot, the local name for malbec there's an ebullient lift to the nose of maraschino cherries, violets and fragrant blackberries with hints of black pepper thanks to the inclusion of whole bunches. A framework of tannins envelopes the intense core of dark berries with an undertow of savoury minerality to support.
